My favorite way to run is to put a destination smack dab in the middle of the workout. I usually run to the grocery store, the park, or sometimes (if I’m willing to run really far!) to my Dad’s house. Having a goal in mind makes the run so much more fun mentally – and it’s a LOT easier when you’re convincing a little one to come along for the ride.
Today, we ran to our friend Brandi’s house. Henry is becoming fast friends with her kids. He was so excited to go over and play in their awesome backyard. Brandi lives a perfect 1.5 miles from me, so it ended up being a fun 3.0 miler.
It may not be the most effective way to run 3.0 miles (fitness-wise) but man… breaking up the workout with a little pool-splashing, pretzel-eating, and swing set-swinging is fine by me.
Came home and made this delicious lunch. I was ready for it, too! Get in my belly.
So we used to keep all our spices in the cupboard on a shelf that I had to stand on my tip toes to see… Jars would get lost in the back, and I could never find something with knocking something else over. The other night, I cleaned out one of the pull-out drawers (it was just uselessly holding water bottles), and lined the spices up on their sides in the drawer. SO MUCH BETTER.
I could actually find the paprika!
Those are little mushroom caps stuffed with a glob of hummus, sprinkled with paprika, and baked at 350 for 20 minutes. So good.
On the side is my go-to meal of brown rice, frozen spinach, and black beans, which I stir fry together with some oil. I use frozen brown rice and canned black beans, so it’s a super easy and fast vegetarian meal.
