Happy Friday!
Kind of like a mullet. A breakfast mullet. Business on the bottom, party on the top. Or something. Cornbread and eggs = the perfect pair!
Spicy Quiche Cornbread
Ingredients (for 3 servings):

1 and 1/4 cup dry cornbread mix, which should then be prepared according to package directions (i.e. with all the egg, water, milk, oil, etc.)

1/4 cup spicy Soy Chorizo (from Trader Joe’s)

8 cherry tomatoes, sliced

1 handful raw spinach, shredded

Dash of olive oil

5 eggs

1/4 cup soy milk

Salt and Pepper to taste
Directions:

Preheat oven to 350 degrees.

Prepare the cornbread mix according to package directions. Make enough mix for 1 1/4 cup dry mix. Pour into a greased cast iron dish and bake for 15 minutes at 350.

In a hot pan, cook tomatoes, spinach, and olive oil until tomatoes begin to wilt.

Combine veggies, eggs, soy milk, and salt and pepper in a small bowl. Beat thoroughly.

Pour egg mix on top of cooked cornbread.

Put back in the oven and bake for 15 minutes at 350. Increase temp to 400 degrees and bake for an additional 5 minutes.

Remove from oven and let stand for 5 minutes before slicing.

I know there are Maggie lovers out there who will appreciate this update.
As you may remember, I was super concerned about how Maggie would react to the baby. Maggie was my first furbaby, and although she has some – errr – difficult characteristics (anxiety, neediness) that are a direct result of her rough childhood (we rescued her), I love her so much. I knew she would be jealous and sad when the baby arrived. And she was, despite my best efforts to give her tons of attention. For the first five months, Maggie basically refused to look at Henry. She acted like he didn’t exist – I think she was trying to will him away. She would sit in the other room when we were on the couch – a huge deal since she’s so attached to me.
Slowly but surely, Maggie decided she didn’t mind Henry. And dare I say it… I think she decided she likes the little guy. Another perfect pair!
What changed? Ironically, Henry now fulfills Maggie’s need for attention. He squeals when she comes close, and he likes to pet her, pull on her ears (something she’s always liked), and touch her tail. And she laps it up. It’s my attention to her times one million. She’s officially codependent on Henry. And it cracks me up. I should’ve seen this coming!
They enjoy quiet time together, too.
Now… if I can just stop her from stealing his plush toys.
