Good morning.  Happy Thanksgiving week!

So much to say…

First things first:  I had an excellent weekend in terms of my half marathon training.  I did find myself running yesterday at sunset in a desperate attempt to squeeze in one last workout before the week was up!

I broke my personal #1 rule of training and went on a run three days in a row – whoops (I try to avoid back to back runs).  My work week was so busy that all my workouts got relegated to the weekend.  I missed one of my four runs, but I’ll take a 14.5 mile week.  I’ve got to say – I’m sore and today is definitely is a rest day.

A little trick – instead of taping your entire training plan to the fridge, just do two or three weeks at a time.  It makes it seem less intimidating… You can keep the complete pages on the fridge, too, so you don’t forget how far you’ve come.

Breakfast was a bowl of savory oats.

Oatmeal

Stir-fried onions, carrots, broccoli

Soy Chorizo

Sunny side up egg

Lots of people have asked me how I make such ‘pretty’ eggs.  Here’s my tutorial for a pretty omelet.  And I must confess that my hard-boiled eggs are so nice because I buy them pre-cooked. Winking smile

But to make a pretty sunny-side up egg, you only need to know three things:  one, the pan must be very hot.  Two, a non-stick pan with a lot of cooking spray is key.  Three, crack the egg very close to the pan – not from high up.  And four, don’t touch the egg until it’s done cooking.

Baby photographer helped me document breakfast:

This is what my photographs look like when Henry is involved….

Oh, much better.

Stay turned for a Mind and Body After Baby update.  Better late than never, right?

We’re half marathon training right now too (Dec 1!!!) , and I have my plan taped up. So far so good!! So excited for Thanksgiving week!

I agree about the training plan. It’s easy to get overwhelmed with ANY big project. That’s why when I wanted to lose 100 pounds my goal was to lose 50. 100 was too big and scary. 50 was easier to envision.

I’m so impressed with the time you take for breakfast! I’m usually in such a rush in the morning that I’m impressed if I have time to make toast!

I am the queen of horrible looking eggs. I try…but eh, at least they still taste good. 😉

Ok, I’m late on commenting but I made eggs this way on Thanksgiving for my husband. I usually suck at making any eggs other than scrambled but they came out perfect!!! My husband was so happy. Thanks!
