Sweaters, boots… FALL!

I’m home for one night and then I’m heading out to Detroit for another work trip (it’s going to be super short and sweet). So we’re maximizing our weekend by going out tonight with my sister-in-law and her man friend.
They’re having a romantic dinner out, and we had our own romantic dinner in. Then, we’re all going to meet up for drinks.
The basic ingredients of this dish weren’t so special – quinoa, kale, beans mushrooms – but what made it really stand out was the yummy sauce.
The sauce was a combination of light coconut milk, nutritional yeast, and Earth Balance butter spread. I made the sauce with equal parts coconut milk and nutritional yeast. It had a great tangy but tropical flavor to it.
Even better when soaked up with bread!
Let’s see…
The rest of the day was mainly spent on the couch. We did go for a long walk, but other than that, it was just rest. Kind of weird how our day off perfectly corresponded (the Husband works weekends) – that almost never happens!
Lunch:
Salted edamame, goat cheese and hummus toasts, and applesauce (hi, I’m 5).
And some cereal to snack:

My hubbers and I usually aren’t home at the same time either, but last night we got to have a romantic dinner in, too! It was great!
