Oatmeal Love

Catching up on the weekend? I made amazing espresso scones!  I posted Jasmine’s Healthy Tipping Point about gastric bypass.   Happy Valentine’s Day.  :) Wheatberry and oats, anyone? In the mix, all prepared on the stovetop:   1/2 cup cooked wheatberries 1/2 cup oats 2/3 cup almond milk 1/2 banana Frozen strawberries Chia seeds   [...]

Espresso Scones

These scones blew all my expectations out of the water!  I made them two ways:  one batch of coffee-infused scones with an espresso glaze and another batch without the glaze so the Husband could cover the scone in strawberry jam.   If you subbed the egg out with a flax egg (1 tablespoon ground flax [...]

Sunshine Pups

I am very happy today.  :)  It positively feels like spring outside.  It’s SUNNY and WARM – in fact, it’s 61 degrees.  We haven’t had a day like this in… months. I hope it lasts!    Snagged a shot of my sunshine pups after their walk: Today, I did a really fast (for me) training [...]

11 Hours

Between yesterday afternoon and last night, I slept 11 hours (but laid in bed for a total of 15 – I was a lazy lady lump).  I think I’m catching up on the sleep zombie vortex I entered during the last month of book writing (have I mentioned I’m SO glad it’s over?).   I [...]

The Five Mile Dash

I rarely wake-up early to do run.  Truthfully, I’m not much of a morning person and I’d rather wait for it to warm up so I’m not shivering through the entire run.  I make early morning runs an exception under the following scenario:   A busy day:  It’s the morning or never. Long runs:  I’ll [...]

Jasmine’s HTP: Health and Gastric Bypass

I am just one person, with my own limited experiences.  This is exactly why I love to share other people’s Healthy Tipping Point stories, especially ones that show ‘success’ isn’t a linear path and that there’s no ‘right’ way do things.  Jasmine approached me about writing a guest post about her experiences with weight loss [...]

Fun with Vibrams

I wore my Vibrams to Girls on the Run yesterday – the shoes were a total hit.  They decided it looked like I had gorilla feet. Plus, I get to run/walk about a mile with the girls so it’s a great way to break them in!  I’m still not used to running very far in [...]

Pup Protector

Since I moved to Charlotte last July, I have found three stray dogs on runs and successfully reunited them with their owners. :)  Today’s pup was Reilly!  He was blind and deaf and oh-so-cute.  His mommy was glad to see him. I took your advice and dealt with my Delayed Onset Muscle Soreness by walk/running [...]

The Grilled Elvis + DOMS

Thank you, thankyouverymuch. THIS is the recipe you should make your sweetie (or yourself or your Mom or whoever) on Valentine’s Day. Why?  It’s totally easy, only requires four ingredients, and doesn’t involve slaving over a hot stove.  Basically, the Grilled Elvis is a Grilled Banana Sandwich with the addition of almond butter. Elvis Presley [...]

Celebrate

We had something to celebrate tonight…  I wrapped up the book this morning and relaxed all afternoon.  It felt well-deserved! The Hus asked what I wanted to do tonight and I said, “I want to go OUT!  Just the two of us.”  So we went.  We went to two bars: a  gastropub called the Lincoln [...]

Almost There

Today, I anticipate I’ll finish up the first draft of my second book.  Yaaaaay!  (source) I feel quite accomplished, and truthfully – it’s a huge load off my shoulders (until I start Book #3 in a few weeks – more deets are forthcoming).  The second book is a re-vamped version of Operation Beautiful: Changing the [...]

Bear-able Run

Heh.  Bad pun, I know.   Random moment of the day:  A little boy and I built a fort out of an examining sheet, a massage table, and four desk chairs (the Husband was treating his brother).  Then, we pretended to be bears and growled at intruders.  It was an awesome way to spend an [...]

Selling the Girl Next Door

(Forewarning:  Potentially disturbing discussion of sexual abuse ahead.)   On Sunday, I watched a CNN documentary entitled “Selling the Girl Next Door.”  The documentary was about the sex trade in America, and how young American girls (as well as foreign girls) get forced into prostitution by pimps.  The world’s oldest profession has been transformed by [...]

Eat-In Day

This recipe was a spin on the Banana Bread Breakfast Bake.  Instead of using corn muffin mix, I used a combination of 1/2 cup oats and 1/4 cup blueberry pancake mix.  I also added in a tablespoon of chia seeds! I love breakfast bakes because they remind me of a (healthy) muffin and are so [...]
