Sandwich, Round II

in All Posts

Running errands is no fun.  Laptops help ease the pain.

The Hus and I finally took our one (and only!!!) car into the repair shop today.  Now that we’re a one-car family, we need to stay on top of repairs.  Luckily, the hour at the shop wasn’t a complete waste because I could freelance write from the waiting room.

Snackage:

I saw Angela’s Healthy Strawberry Oat Squares with Homemade Jam and then experienced a major hankering for jam.  Although I wish Angela could’ve teleported me some oat squares through the Internet, toast and jam worked for me!

Dinner on a tray:

Thank you, Husband!  I think he forgot we had veggie sandwiches for lunch, though, because we basically had the same thing for dinner!

A sandwich with a veggie burger, shitake mushrooms, onions, tomatoes, and spinach.

Side note: I realize that we are HOUSING bread lately.  Thank you, marathon appetite.  :)  We have gone through two loaves in three days!  Mmm.  Bread rules.

With roasted potatoes and a salad:

With loads of BBQ sauce for dipppppping!

And a blondie for dessert.

Time for lots of HGTV and article editing.  :)

  • Liz @ Tip Top Shape October 18, 2010, 8:58 pm

Love the dinner on a tray 😀

  • Estela @ Weekly Bite October 18, 2010, 8:58 pm

If its one thing I really don’t enjoy, its waiting for my car to be fixed.

    Have a great night 🙂

  • Kristy @ KristyRuns.com October 18, 2010, 9:01 pm

That photo of you two in the waiting room is too funny!

The internet makes everything better…especially long waits.

  • Mary @ Bites and Bliss October 18, 2010, 9:03 pm

I wish I think about bringing my laptop around whenever running errands. Whenever time’s spent just sitting somewhere I always think “I could be getting SO much blogging/school work done right now!” but then end up getting stuck messing with my phone being unproductive. 😛

  • Lauren October 18, 2010, 9:04 pm

Bread is the food of life! Eat up runner. 🙂

  • Nicole @ yuppie yogini October 18, 2010, 9:05 pm

You need a bread machine…they are awesome! Makes the whole house smell so good and it’s much cheaper.

    • Caitlin October 19, 2010, 8:53 am

oh man, i want one! maybe for christmas.

  • Kristina @ spabettie October 18, 2010, 9:05 pm

ah, I had the very same strawberry jam craving this afternoon, thanks to Angela… YUM.

  • tina October 18, 2010, 9:06 pm

i love that you guys went to the car shop together- so cute! 🙂

  • Angie (My Life in Bites) October 18, 2010, 9:10 pm

Nothing wrong with two vegetable sandwiches in one day! They both sound delish!

You deserve all of those carbs – savor every single one!

  • Sarah for Real October 18, 2010, 9:12 pm

I love how your husban plays along. Mine would totally make goofy faces or flash gang signs if I tried to take a picture like that!

  • Ellen@FirednFabulous October 18, 2010, 9:15 pm

Way to make every minute count! I could most definitely learn from that 🙂

  • Stacey October 18, 2010, 9:17 pm

Just like my house! We go through abt 2 loaves of bread a week, but I’m not training for a marathon at the moment haha 🙂 I just like bread:D

  • Stace October 18, 2010, 9:21 pm

If you run in the morning and freelance in the afternoon and night, when do you find time to work as an author (on your next book?). Are you already attached to an publisher for the next one or does the process start anew?

    • Caitlin October 19, 2010, 8:55 am

I am currently not doing any book writing because I’m in the waiting game stage where I’m waiting on my publisher to make an offer (staying with Gotham because they rule). Should know in a week or two! Very exciting. Once that happens, I will probably eliminate freelancing for the duration of the book writing. I can’t do both. I’ll also cut back on exercise so I have more time to work.

  • carlee October 18, 2010, 9:28 pm

hahaha that’s funny!I noticed you guys eat the same bread a lott! but thats good! Bread is delicious!
in fact i’m very guilty of eating beyond several slices( 5? 6? ) straight outta a fresh loaf of homemade sandwich bread.

  • claire October 18, 2010, 9:33 pm

Yeah lady, you deserve that bread! YUM, I know, Angelas strawberry bars made me swoon all afternoon!

  • Melissa October 18, 2010, 9:37 pm

I have a major craving for jam now too!

My HP laptop is about to kick the bucket and I want to make the move to Toshiba. What model did you get? Would you recommend it?

    • Caitlin October 19, 2010, 8:57 am

I think it’s the Satellite L665D. I really like it! It’s my second Tobisha and they are awesome.

  • holly @ couchpotatoathlete October 18, 2010, 9:44 pm

The pic of you in the car repair shop says so much 🙂

I had that same craving for jam when I read Angela’s post!

  • Amanda (Eating Up) October 18, 2010, 9:47 pm

That blondie looks amazing! What a money shot.

  • Jessica @ The Process of Healing October 18, 2010, 10:02 pm

    Yes mam, bread is AMAZINGNESS!

  • Caitlin October 18, 2010, 10:08 pm

Yeah dude when I was swimming, I went through bread/cookie dough/cheesecake/tortillas/bagels/ all carby high calorie foods like it was water.

  • Rachael October 18, 2010, 10:10 pm

I think I said it way back when, but kudos again on being a one car family. I think it’s one of those things that folks assume will mean hardship and woe, but which is actually pretty easy to adapt to.
My diet right now also includes copious amounts of bread…I blame running too. I made two dozen bagels the other day out of the last of my chestnut flour, and I think we’re down to six 🙂

    • Caitlin October 19, 2010, 8:58 am

it is easy to adapt to, you just really have to plan ahead! not too bad.

  • Hope October 18, 2010, 10:13 pm

    Yum bread!! hehe
Your pics totally made me crave little roasted potatoes for dinner tonight! Yummo!

  • JenATX October 18, 2010, 10:24 pm

hehe I had about 12 samples of bread today @ Whole Foods.. oh i also asked about this box of minichocolates and the lady @ checkout said I could take the whole box for free if i wanted! so i did, duh.

  • *Andrea* October 18, 2010, 10:26 pm

mmm that blondie looks delicious! one of my favorite desserts by far!

veggie sandwiches are so good and i love a quick& easy meal. george forman is a genius! lol

  • maria @ Chasing the Now October 18, 2010, 10:50 pm

I almost had pasta twice in one day last week. I remembered at the last minute and switched it up.

  • Jasmine @ Eat Move Write October 18, 2010, 11:05 pm

The photo in the waiting room is really funny because who took it? lol. It’s like someone was hiding behind a stack of magazines and snapped your pic lol.

    • Caitlin October 19, 2010, 8:59 am

      self timer 🙂

  • Kim@EatandBe October 18, 2010, 11:37 pm

Nothing wrong with 3 loaves of bread in 2 days. I LOVE bread and my hubby and I go through similar amounts (though we aren’t training for a marathon…hmph). Perhaps it’s b/c he’s European where fresh bread is a daily ritual in life! Love it!

  • Theresa October 19, 2010, 12:04 am

With all due respect, we tried Bone Suckin Sauce, and we didn’t likevit at all…it was so bland to us it was almost tasteless! Do you add something to it or does it come in another more flavorful flavor??

    • Caitlin October 19, 2010, 9:05 am

really??? i could drink that stuff for breakfast.

  • Moni'sMeals October 19, 2010, 12:33 am

    cutest couple ever you too!
No carb left behind and I love that tray idea. 😉

  • Chelsea @ Strawberry Sweat October 19, 2010, 1:17 am

Ha bread is never one of those things I crave when training. I’m much more of a pasta girl 🙂

  • Mimia October 19, 2010, 1:20 am

You made a good use of the boring waiting time. Perfect!

  • Marina October 19, 2010, 1:28 am

I could eat sandwiches all day long 😀
How strange it is, people in my country usually eat one loaf of bread in a day, and I’ve seen that nobody on the blogsphere does that 🙂
    cultural differences are so interesting

  • Lyn October 19, 2010, 1:57 am

My first visit to your blog. Your food looks amazing! Simple stuff but so good.

  • Heidi - apples under my bed October 19, 2010, 5:29 am

Your roast potatoes always look killer good. I always crave roasted veg after reading your blog! mmmmm.
    Heidi xo

  • Lauren @ Girlwiththepinkhat.blogspot.com October 19, 2010, 7:30 am

Your sandwiches look SO good. I always get board of the same old sandwich, I will have to try one of yours!

  • Chelsea @ One Healthy Munchkin October 19, 2010, 7:53 am

Nothing wrong with two sandwiches in one day. Especially when they both look so yummy! 😉

  • Amber K October 19, 2010, 10:26 am

That’s awesome that you’re able to work from everywhere! Would definitely make those long waits less horrible.

Mmmm toast with jam, sounds soo good right now! I bought some gluten-free bread to try. (Although at $5 for a very small bag I’m going to have to look into making my own!!)

  • jodie October 19, 2010, 11:31 am

Sandwiches look yummy. The blondie looks good, I have never had one.

  • Lisa October 19, 2010, 2:23 pm
