Not a Mile Too Soon

in All Posts

I am so, so glad to be in taper mode for my upcoming marathon.  I think this taper came at the perfect time, truthfully. :)   I was just starting to feel a little burnt out on long distances.   This morning’s 4.25 miler was a challenging run (because all mileage is an awesome challenge!), but a great change of pace.

I finished up in 42:00 or so.  Only 11 days left until my marathon!  That’s only five more runs until race day.

A beautiful breakfast:

IMG_4216

In the mix:

  • 1/2 cup raw oatmeal (yes, it really tastes good)
  • Honey Greek yogurt
  • Raspberries
  • Pumpkin

And lunch:

IMG_4220

I had a serious hankering for quesadillas!  Mine was stuffed with stir-fry mushrooms, spinach, and cheddar cheese.

And roasted broccoli with BBQ sauce:

Off to coach Girls on the Run.  I’m excited to see the girls!  Soon we’ll be doing a practice 5K, so I’m going to urge everyone to run 2.5 miles today.

Oh, and Maggie told me to tell everyone hello.

Hi Maggie! 🙂 She’s so cute!

  • Beth @ Beth's Journey to Thin October 19, 2010, 1:05 pm

I had a similar breakfast today with greek yogurt, pumpkin, banana, and granola. SO satisfying and perfect for the season. I can’t believe you only have a few runs left until marathon day!!!

  • Sarah-Mae @ Eat, Run, Knit October 19, 2010, 1:15 pm

Isn’t the taper glorious? Besides being psychologically difficult for me to get over the lack of cardio they sure are great. I was so lucky during my last marathon training program because the recovery weeks fell into all the best places! Like while I was on vacation in Hawaii! Less speedwork and mileage while on vacation? Yes please!

  • Estela @ Weekly Bite October 19, 2010, 1:20 pm

I’m sure you so happy to be tapering! Its like a gift from god! It happens just in time 🙂

Have fun at Girl’s on the Run 🙂

  • Kristina @ spabettie October 19, 2010, 1:20 pm

    HI MAGGIE !! <3

lunch looks perfect today… I want that.

  • Sarah October 19, 2010, 1:21 pm

Caitlin, I just love the way you eat: simple, satisfying, colorful, and healthy.

    • Caitlin October 19, 2010, 1:21 pm

thanks! good food doesn’t have to be complicated 🙂

  • Tina @ Faith Fitness Fun October 19, 2010, 1:22 pm

You sound so confident with your training this race. I bet it is really going to pay off. One of the beauties of knowing your body. 😉

  • Angela @ Eat Spin Run Repeat October 19, 2010, 1:22 pm

My breakfast was almost the same, except I used puffed cereal instead of raw oatmeal. Are rolled oats and raw oatmeal the same thing (I’m assuming no, but can you explain what the difference is??) Thanks Caitlin!

    • Caitlin October 19, 2010, 1:26 pm

I don’t know the difference but I bet someone does!

      ?

    • victoria October 19, 2010, 2:43 pm

haha…i’ve wondered the same with your recipes caitlin. I had a huge recipe fail with pancake truffles because i thought raw oatmeal was as you put it “oatmeal uncooked” (which in my mind included the liquid). One day i will try the recipe again…lol…

      • Caitlin October 19, 2010, 5:40 pm

OH NO. LOL. that’s pretty funny though. 🙂 Try them again, they are the bomb.

  • Megan October 19, 2010, 1:26 pm

love love love the Maggie pics (and James too.. I’m not picking favorites!)

    enjoy your tapering!

  • Holly @ couchpotatoathlete October 19, 2010, 1:29 pm

I agree — raw oats taste great mixed with other foods! Lately I’ve been eating a bowl of raw oats with almond milk — like cereal. It tastes great!

I love your leaf bowl 😉

  • Janessa October 19, 2010, 1:30 pm

Raw oats are so good! I’m surprised people are so scared of them. I had the dickens of a time convincing anyone that raw oats in my smoothie was delicious.

And your queso looks good! Does the Charlotte-area have daiya cheese yet? It’s yucca-root based and melts beautifully. (The cheddar is way better than the mozz, but they work best in combination.)

    • sarah October 19, 2010, 7:53 pm

I remember someone once telling me that if you eat raw oatmeal you will get worms in your stomach! I never believed them since I occasionally ate it raw on yogurt and did not have worms.

      • Janessa October 20, 2010, 3:03 am

Sarah, who on earth would say that? I’m glad that you stuck with oats on yogurt. Crazy! 😀

        • Caitlin October 20, 2010, 6:30 am

hahah i love the stuff that kids will believe! i believed a watermelon would grow in my stomach if i ate a seed!

  • Kelly October 19, 2010, 1:30 pm

I agree….raw oatmeal is wonderful! I eat it raw all the time!

  • Kelsey October 19, 2010, 1:36 pm

Hey Caitlin : ) I’m just wondering what your thoughts on protein are? I notice you eat a lot of carbohydrates (and rightly so with all the running!) but especially since you are a vegetarian, I would love your take on protein.

    • Caitlin October 19, 2010, 1:38 pm

Once I went back and counted my protein over several days of eating on the blog and I easily took in 50 – 65 g of protein, which is the recommendation amount for women my size. I think society places way too much emphasis on protein intake (studies show we get way more than enough on average). For example, my breakfast this morning had 21 grams of protein in it (from Greek yo + oatmeal). So, I do think I eat a lot of carbs but it seems to work for me? What do you think?

  • Samantha Angela @ Bikini Birthday October 19, 2010, 1:36 pm

Oh, Maggie is being social now? How unlike her!

  • Brittany (A Healthy Slice of Life) October 19, 2010, 1:40 pm

I am anxious to try rolled oats for breakfast! Do you just scoop pumpkin out of the can and add it to breakfast?

    • Caitlin October 19, 2010, 5:36 pm

      yes! easy!

  • Mary (What's Cookin' with Mary) October 19, 2010, 1:41 pm

    i heart maggie !!

    look at those EYES 😀

  • suki October 19, 2010, 1:46 pm

Great photos! Love the leaf-shaped plate. It really makes me think that I should go out and get seasonal wares for the house since I have storage space, but then I don’t want to have to move it later. 😛

  • Chelsea @ Strawberry Sweat October 19, 2010, 1:55 pm

Mmm, now that I see what you ate for lunch–I want a quesadilla of my own!

  • Jodi October 19, 2010, 1:56 pm

I love your choice of foods! Raw oatmeal and Greek yogurt is one of my favorite breakfast dishes to throw together. Enjoy the tapering!

  • Jessica@tastyandtrim October 19, 2010, 1:58 pm

I need to give raw oatmeal a try. I have seen quite a few people eating it in the blog world and wasn’t too sure about it at first, but I guess it would almost be like a granola? I guess you can’t knock it ’til you try it 🙂

  • Marisa @Loser for Life October 19, 2010, 2:00 pm

    Hi Maggie!!!

So cool that you coach GOTR!

  • laura buchanan October 19, 2010, 2:08 pm

hi caitlin, new follower here(and fellow NCer near Charlotte too!). you make healthy/vegetarian eating look so good and easy!!! i literally drool looking at some of your meals. love reading your blog!!!

      hi!!! 🙂 thanks!

  • Mary @ Bites and Bliss October 19, 2010, 2:13 pm

That quesadilla is making my mouth water!

  • Lisa October 19, 2010, 2:24 pm

I love the flower photos. What kind of camera do you have?

  • Julie October 19, 2010, 2:28 pm

What kind of wraps do you buy? My veggie wrap was pretty sad yesterday because I forgot that Flat Out wraps are oval and not round! Boo.

    • Caitlin October 19, 2010, 5:38 pm

      those are trader joe wraps!

  • Hope October 19, 2010, 2:39 pm

Hi Maggie! Love the look on her face!

  • Laurie October 19, 2010, 2:44 pm

    Hi Maggie! Sweet adorable Maggie!

  • Lindsay @ The Ketchup Diaries October 19, 2010, 2:49 pm

Confession: I have a similar leaf plate but instead of using it for healthy breakfasts, I use it as a festive candy dish. Rigt now, it’s holding Lindt truffles with a jack-o-latern on the wrapper. Don’t hate!

    • Caitlin October 19, 2010, 5:39 pm

      Can I have some?

  • Kjirsten- Balanced Healthy Life October 19, 2010, 2:51 pm

I love uncooked oats! The quesadillas looked great!

  • Ellen@FirednFabulous October 19, 2010, 2:58 pm

Well hey there, Miss Maggie! The quesadillas sound so good right now! They always hit the spot for me, and they’re so easy to make. Bonus!

  • Marina October 19, 2010, 2:59 pm

Mhm, quesadillas, the stuffing sounds great!

  • Amber K October 19, 2010, 3:11 pm

    Hi Maggie! 😉

  • Geneviève October 19, 2010, 3:31 pm

I’ve started eating raw oatmeal (all thanks to your declious-looking breakfasts!) and just wanted to share my latest experiment: Blend plain yogourt (I used Greek) with half a frozen banana until nice and smooth, mix in raw oatmeal and chopped up almonds!
Tastes amazing, sort of like a milkshake and kept me nice and full during class!

    • Caitlin October 19, 2010, 5:41 pm

that sounds pretty good! i need a new blender that could handle that.

  • Jessica October 19, 2010, 3:35 pm

I used to eat raw oatmeal straight out of the box when I was little- I thought it tasted good! I should eat it more often now.

  • Claire (Low Impact Fashionista) October 19, 2010, 3:35 pm

You are so lucky you get to be a part of something as inspiring as Girls on The Run. I need to find something like that in my city, I would love to volunteer coach!

  • eatmovelove October 19, 2010, 3:36 pm

Raw oatmeal rocks…but with some flav’ ;).

    Only 5 days? EEPS! I can’t imagine!

  • Stacey (The Habit of Healthy) October 19, 2010, 3:46 pm

Ooh, not long until your marathon. I’m really looking forward to reading your race recap.

  • Jessica @ The Process of Healing October 19, 2010, 3:56 pm

  • Laura Garner October 19, 2010, 4:58 pm

Wow! This food looks amazing! I will definitely have to try that! I’ve never thought of putting pumpkin in that combination. Genius 🙂 That’s awesome you are running a marathon! Good luck!

  • Camille October 19, 2010, 5:31 pm

    Taper is the best 🙂

  • Jamie @ Food in Real Life October 19, 2010, 5:43 pm

I can’t believe your marathon is in 11 days! My half is coming up, (November 22nd)…I’m not sure if you’ve already done a post like this, but I’m interested in hearing about the aftermath of training. I’m concerned that there will be a “low” for me since I’m always excited about having my eye on the prize. I guess I just need to sign up for more races!

    • Caitlin October 19, 2010, 5:55 pm

my advice is to start planning what you’ll do next. for example, i already know i want to cut back on running and do more hot yoga instead (and write). i think you just need something to replace your time. 🙂

  • Michelle M October 19, 2010, 5:49 pm

Mmmm…I love raw oatmeal for breakfast. I mix in a little Justin’s chocolate Hazelnut…YUM!

  • Lisa (bakebikeblog) October 19, 2010, 6:05 pm
