I always joke that planning the Healthy Living Summit (sponsored by Arnold and Oroweat) is pretty much like planning a wedding – but a wedding with sponsors, swag bags, 200 attendees, product trials, and name tags… and without wedding cake.
After a marathon committee planning call and putting out some minor fires, I am ready to call it a night! Can’t wait to get to the conference and MEET everyone! That’s the really fun part. 🙂
Snack was Greek yogurt, chia seeds, 1/4 cup oatmeal, and blueberries:
And after some freelancing, I drove to our meet-up spot to run with Emma, Emily, Michelle, and Whit. Except all I was greeted by with was an empty lot:
When I was starting to give up hope, Emma came up! Everyone else got stuck in traffic or delayed so it was just us.
Unfortunately, neither of us were really feeling it. You know that deadened leg feeling? I felt like each leg was SO heavy and hard to lift. Emma was feeling the heat and humidity, too. Our 3.0-mile loop seemed to last forever, and we were both pretty pumped to finish in 30:33.
Dinner:
I had cooked asparagus and small potatoes with some brown rice and grilled tofu with BBQ sauce. It was delicious!

So, quick question: I’ve always heard that chia seeds don’t give you many health benefits unless they’re ground into chia meal. Same with flax. Is this true??
