Pancake Truffles, Take II

I thought I’d make my recipe for Pancake Truffles again this morning.

This version had a sweet surprise in the middle, though!

Instead of a banana segment, I used a big, juicy strawberry in the center and shredded coconut on the outside.  It was pretty much as delicious as I thought it would be, but the banana holds together in the oven better and results in a prettier truffle when you cut into it.  🙂

    And great idea to use strawberries in the truffles. Those look delicious! Do the truffles keep you full for a while??

      yes they are calorie dense (prob about 600 calories) and definitely keep me full.

    I just bought a huge pallet of strawberries at Costco and they are honestly the sweetest berries I’ve ever had. They are HUGE, too, so would be perfect for this recipe.

    I’m thinking about trying these for breakfast tomorrow…do you think they’d work if I made them tonight and then warmed them in the morning? i don’t exactly have a lot of time in the morning!

      I haven’t tried it so I can’t guarantee it! But I think the banana would heat up better.

    woah, i just drooled a little. that looks sooooo good!!! hopefully the backyard strawberries will be ripe by this weekend, cuz i’d LOVE to make them with freshly picked strawberries! and what a great quote!

    Those truffles look sooooo good. The last bunch of strawberries I ate weren’t that great. It’s a hit or miss kind of thing, unfortunately!

    I just saved that quote. I have a gmail “chain” in my inbox that is just emails i send myself with awesome quotes I find. I think it is about 100 emails now. Takes a while to “expand all,” but it is wonderful on a bad day or just a down moment to read things like this!

    I’m a sucker for quotes and that’s one of the sweetest ones that I’ve ever heard. I’m a hopeless romantic despite being hurt and let down and all that by guys.     Also, this might be a weird question, but what are the strawberries like when you cook them?? Do they get really mushy or since they are “protected” do they retain a lot of their original texture? Regardless, the truffles look amazing!

    I am not sure why but since I first heard it, it has resonated with me. I think that I would also rather love, and know what it is like and to constantly have the feeling in my heart that to never know what it can be like to look at someone and just be.
    I have cravings for the banana wonton things from the other day. Think I will make them this evening.:)

    These look so good. I can think of a million ways to fill them. I bet blueberry would be really good. So would chocolate, I’m sure, but I guess it stops being breakfast then. Great quote, too!

    I started using a “yoga towel” over my mat (by Gaiam maybe?). It fits perfectly over the mat and then I can wash it after every workout and not have to worry about any germs that may fester on the mat – whether from the floor or from the sweaty mess I make! PLUS, I don’t slip around when I use it!

    Haha, I needed that quote today. I’m going through one of those weeks where I’ve decided to never date again, but I need to remember how fulfilling real love can be.

    However, I love myself, and if that’s the only love I ever find it will be enough. 🙂

    I love that quote, I too remember it from See Bride Run! Me and my man just walked our pup and coming home to read this quote just made it more sweeter (we are still in the first year of our relationship)! The pancake truffles look scrumptious yet again!

    My favorite quote is hanging on the wall of my cubicle so I can see it every day. I think it fits for me because I tend to research everything to the death and this reminds me that sometimes you just have to do the thing.

    That’s beautiful. It sort of reminds me about how at the beginning of my disorder I had begun to shun my friends (the whole thing leading up to the disorder involved a changing of schools, loneliness and desire for independence). I told myself that to be “grown up,” I had to be independent, aka COMPLETELY independent. I told myself that I didn’t need anyone else’s love, that all I needed was myself, that I could do anything by myself if I tried. I scorned other people’s love, and care; I told myself I didn’t need friends. I withdrew into myself, looking down on other people, constantly comparing and measuring myself up next to them. I competed in my own, private contest.

    The truth was, it made me lonely. I was independent, yes, I didn’t need anyone else’s help, yes, I could do everything on my own, yes, yes, YES. But was I happy? I wasn’t. I had nobody to share my successes with, nobody to talk to when I felt down, and most importantly, I had nobody to tell me what was wrong with me.

    Looking back, I feel like crying because why was I so stupid? Did I honestly believe that I could be superhuman and not need love? Why did I ever want to “grow up” so fast?     What a great quote! I can honestly only hope me and my boyfriend are as happy as you and your husband are in 3 years time (we’ve been together 3 and a bit). It’s very inspiring!
