Self-proclaimed Breakfast Day continues with a very breakfast-y lunch.
My savory oatmeal was hot, cheesy, and delicious. Plus, I snuck in some vegetables. 🙂
My oatmeal contained:
- 1/2 cup oatmeal
- 1/2 cup water
- 1/2 cup milk
- 1/4 cup cheese (added towards end of cooking)
- 1/2 cup shredded organic baby spinach (added towards end of cooking)
- Garlic, pepper, and salt
- Toppings: 1/4 cup pinto beans and a little more romano cheese.
Mmmm! With a cup of Zesty Carrot Juice:
Still perfecting the Zesty Carrot Juice recipe, but it contains a mix of organic apple juice, organic carrot juice, lime and lemon juice, and pureed ginger. It’s delicious and really refreshing.
Plus, pickles:
I’m stuffed. I could barely finish the oatmeal. :) If you’re scared to try savory oatmeal – don’t be! It’s so good.

Would you believe I didn’t try oatmeal until I was 23 or so? Now, I love oatmeal almost every way — sweet, savory, in smoothies, in cookies, baked! Just not cold.

Ok, I am going to try Savory Oat's this weekend! I wouldn't think "oats" and "cheese" would be good but you got me convinced so I will try it. =) Laura
