Not My Mama’s Lasagna

Good evening!

 

Today has been quite the catch-up day.  Between the full-time job, the part-time night job, Operation Beautiful, and marathon training, my weeks are starting to look just a little bit FULL.  I tried to get all of my chores done today to make the rest of the week a tad easier.

 

Brunch (around 11) was Chobani pineapple (just as good as everyone says!), granola, and banana:

Then, I set to cleaning the house.  Frankly, it looked like a bomb of dust had gone off in my living room.

 

I took a break and had a small roll that I snagged from Taste of the Nation last night.  I dipped it in a little hummus:

I ate a really late lunch.  I had two more of the free rolls with melted cheese, 1 cup of tomato sauce, and a salad:

I checked a TON of other tasks off my To Do list this afternoon.  It was a tedious task but so worth it.  I feel so accomplished!

 

I snacked on a plum:

Then, I went grocery shopping.  I took my meal planner folder with me.  I have to say that meal planning is really going well — I think there’s been better recipes on the blog for the last two weeks AND meal planning is making trips to the grocery store a lot easier.

 

I really only planned three meals this week, but two of them are casserole dishes that are designed to fed us throughout the upcoming week:

While shipping, I posted this Operation Beautiful note in the dog food aisle:

The first casserole dish for the week is vegetarian lasagna.  My mom is so much better at making this than I am:

I layered the following veggies in my lasagna (stole the basic recipe from the back of the whole wheat lasagna noodle box):

 

  • Mushrooms
  • Spinach
  • Yellow Squash
  • Red Peppers

    I gave the pineapple chobani a second time and I gotta say I liked it more this time around. Especially compared to vanilla, it was creamier, and I like how the pineapple sweetened it without adding a lot of fruit flavor

    Hey dear! Don't you just feel a million times better when you are caught up on the household chores? I cleaned this morning too, and it was a weight lifted off of my shoulders.

    I haven't made lasagna is a LONG time. I kind of forget about it, but I should make some soon. It is definitely a good one for leftovers. Have a good night!

    The lasagne might not be the same as your Mumรขโ‚ฌโ„ขs but it looks pretty delicious! Lasagne is great because it makes so many meals, must make it again soon.

    Your lasagna looks yummy and veggie-packed! I'm sure it tastes as good as when your mom makes it ๐Ÿ™‚ I am always intimidated by lasagna… I'm afraid it won't gel correctly. But yours looks awesome, and clearly wasn't so scientifically created!

    Your lasagna looks AMAZING, but if you want another great recipe, this is one of my favorite recipes ever.. perhaps even my #1 fave becuase it is delicious but SO easy!
