I learned this trick from Meghannmix your muffin batter the night before and store overnight in the fridge.

I used this recipe from Stonyfield to mix up the batter for Blueberry Yogurt Muffins.   This morning, I simply scooped the batter into my muffin tin and baked the muffins while I walked the dogs.

 

Viola!  Homemade Blueberry Yogurt Muffins on a weekday.  What more could I ask for?

These muffins were fabulous!  Instead of oil, I used plain Greek yogurt.  The recipe also uses a mix of whole wheat and regular flour – wahoo!  I reduced the amount of sugar from 1/2 cup to 1/4 cup and couldn’t taste a difference.  This might be the healthiest patch of muffins I’ve ever eaten.

Operation Beautiful

    Yum! Applesauce is also a great substitute for oil but yogurt is delish also.

    And good to know that cutting down on sugar doesn't make a difference; I'll try that next time!

    Mmm. I love blueberry muffins! What a great idea to mix up the batter first. I usually make mine the night before but it would be better to have them fresh and warm in the morning 🙂

    Yum, those muffins look divine! I once made Stonyfield farm strawberry muffins and they turned out very well. Stonyfield sure knows their recipes!

    Sometimes I use a ripe banana in place of the sugar and butter in my muffins…but I guess it would taste like a blueberry banana muffin instead. Yogurt is an awesome idea too!!Once again…totally love your cooking ideas!

    Can someone please post the recipe for the muffins? The link does not have the correct recipe as it has plain flour and butter, not oil.

    mo – the recipe on the stonyfield is the same i used, just sub out 1 cup of plain flour for WW. i used the butter. oh and i reduced the sugar by 1/2

    j – i got the recipe from a magazine which seems to be sligthly different than whats on the stonyfield website. i think the only major change is i did 1/2 whole wheat flour. try that!
