I hate waking up earlier than normal because it throws off my whole day of eating! By 11 AM, I was starving for lunch (I woke up at 5 AM and ate around 5:30).
It was worth it to dig in early because boy-oh-boy was it GOOD!
I made amazing bean sammies with steamed kale and cheddar. The "meat" of the sandwich was mashed dark red kidney beans.
I really do not miss meat at all, especially when I find fun new ways to get my protein in! I can’t believe it’s been 3 months since I went vegetarian. I haven’t had a meat craving once, which is surprising because I definitely used to have cravings all the time.

I got a fun package in the mail over the weekend from Tina. She sent all the Healthy Living Summit steering committee members (me, Meghann, Heather, Kath, and Jenna) fun Boston t-shirts to get us excited for the Summit.

It’s been a blasty planning the Summit with the girls, and I’m so EXCITED for next week that I can hardly stand it! I hope all of our hard work pays off and it’s a seamless, fun, and educational event.
