Good evening! After a 14-hour work day and juggling three jobs (yes, blogging counts), I was SO happy to come home to this dinner:
BEST. HUSBAND. EVER!
The Husband made a thin-crust whole wheat pizza with red pepper and onion. I had 1/4 of the pie:
I was really hungry by the time I got home from my second job (at 10 PM!), but I must admit at the Green Monster I drank at 5 PM held me over very well for at least 4 hours.
Green Monsters are so amazing because they are SO filling and nutritious without a huge caloric price — which is key for someone like me, who has to split dinner into two mini-meals at 5 PM and 10 PM during the weekday.
My Green Monster contained:
- 2 cups kale
- 1 cup unsweet almond breeze
- 1 tablespoon flax
- 1 banana
A few hours before the Green Monster, I had some cereal + yogurt + blueberries (around 2 PM):
And two Dove Chocolates.
Operation Beautiful got a makeover today by the lovely Zesty from ZestyCooks.com! He’s a whiz!

In other news…. Operation Beautiful continues to explode! I received a bunch of notes tonight for Wednesday’s post. Tomorrow’s post is going to be a good one, so stayed tuned! It’s so strange, but OB has actually made me happier over the last few days. It’s so awesome to see women reaching out to other women in a positive and supportive way! Rock on, ladies!
