It’s Hot in Here!

I was so happy today!  And it was all because of Operation Beautiful!  This is a serious Caitlin smile:

Thank you all for being so enthusiastic about the Operation Beautiful mission!   Remember, you can read all the Operation Beautiful notes at the end of the master Operation Beautiful post.

In addition to the exciting announcement about the Healthy Living Summit (August 14 – 15, hope to see you in Boston!), I had a jam-packed afternoon!

I went to Physical Therapy around 3 and learned a bunch of new strength training moves (which yes, I promise to share at some point!). 🙂 It was definitely a challenging appointment — lots of squats!  I also bought myself knee tape so I can wrap my own knees.  This stuff is AMAZING!

My mid-afternoon snack:

I made a platter of:

  • Grapes
  • Carrots
  • Hummus
  • Mini-whole wheat pita

Yum!

… Which is about when I noticed that our AIR CONDITIONER has DIED.  I live in FLORIDA!  It’s about 95 degrees inside my apartment right now, according to my thermostat.  It’s loco!

Obviously, I drank a Strongbow Hard Cider to cool off:

Dinner was equally cool and refreshing:

Just a plain old tofu wrap with cheese and lettuce, a pickle, and some grapes.

Off to go sweat my booty off!  I hope the maintenance guy fixes it soon!

ooo I hope they fix your AC ASAP… I've been in Fl in the summer w. no AC- not fun!

I think that everything you are doing for Operation Beautiful is great! I can only imagine how seeing such a kind note would brighten my day, especially if it was a rough one. 🙂

I was wondering, however, how long you are going to post everyone's notes on your blog? All of your posts are now getting quite long and it's hard to read/scroll through them all – would you maybe consider starting a separate page just for the notes and linking to it with updates instead of putting them all in your main posts?

I hope this doesn't come out the wrong way; I'm just sharing my thoughts!

Oh no! I hope your AC is fixed soon! Good call sticking with cooling foods and a tasty brew 🙂

    Hey Caitlin!

I unofficially just joined Operation Beautiful.

I went on SparkPeople today and was on the message board. I like to read the Fitness/Exercise sometimes when I'm bored 😉

Anyways – a lady was beating herself about taking two days off from the gym – while visiting her parents! Her post title was actually "Doubting My Decision".

    My response:

"You are RESPECTING your body! It doesn't need to be pushed to exertion every day. Enjoy the break and get back to hitting it hard when you can! Working out when your mind AND your body are telling you not to isn't always a good thing.

You'll be renergized and reinspired as soon as you get back at it. Look at 2 days off as a reward for allll the hard work you've done, and all the hard work you WILL do.

You are beautiful whether it's a rest day or not :)"

I find people on sites like these are often SUPER hard on themselves. Hopefully I brightened her day 🙂

Your wraps always look so exciting Caitlin!
Have you ever tried chilli jam (maybe you call itchilli jelly?) with tofu? I had it the other day and it was a-ma-zing!

Also, glad the physio is going well!

It seems that breaking air conditioners is turning into a trend! Mine is broken & so it my Dad's! It was 93 & 80% humidity here in the Chicago-land area! Holy sticky!

    Thankfully it's breezy today!

Loving Operation Beautiful & linked you to my blog the other day. It seems to be taking off & agree that I hope it stays!

    Enjoy your weekend!

Dear me, no A/C? Good luck!!!

  • Amy Pacheco June 22, 2009, 11:33 am

Hey Caitlin! Quick question… what kind of tofu do you use? I have been wanting to venture into buying it and preparing food with it on my own but always have such a hard time in the grocery store! There are so many different kinds … Mini tofu lesson?

    =)

  • Caitlin at Healthy Tipping Point June 22, 2009, 11:36 am

amy – if you are going to bake it, get firm or extra firm and press the water out by putting it in between some paper towels and placing a plate on top. leave it there for about 10 minutes and the marinade however you wish – you can really screw it up. bake for about 30 minutes at 350. the softer kinds go in smoothies and whatnot (you can eat tofu raw).

  • Amy Pacheco June 22, 2009, 12:46 pm

I can screw it up or can't — haha!

Thanks! I have seen some that is already baked — do you prefer the taste of the kind you press?

And when, o when, will we be able to register for the Summit! I LIVE IN BOSTON WHOOOOO-HOOOOOO!!!

strongbow is my fave! i'm really not a fan of magners. [last time i had it, it tasted like peanut butter – weird!]

i'm originally from england [chelmsford – but my dad is from camden and my mum is from canvey] and you really can't beat a lovely chandy. the bottled american versions are gross.
