Today has been a whirlwind. I have SO much to do with my job, the blog(s), and the Summit that I was up at 5:00 AM to work.  The Husband sleepily asked as I got out of bed "What’s wrong?" and I just replied, "I have to work!"

 

Maggie looked pretty pissed that I made her get up at 5:00 AM.  She stuck her head under the couch pillows and went back to sleep:

But seriously, I love it!  I don’t mind pulling 17-hour days because I’m doing what I love to do (and paying the bills).  Do you work a lot of hours, too?

 

My breakfast was simple because I was in no mood to cook this AM:

Yogurt + blueberries and a bagel with PB.

 

Since I ate breakfast so earlier, I was super hungry by 9:30 and had a lovely snack:

I am never going through the headache of chopping up a cantaloupe again.  Eating half of it with a spoon was so fun! And so easy.

 

Lunch was my 12-Minute Pasta:

12-Minute Pasta

 

Ingredients (for 1):

 

  • 1 serving of dry pasta, any shape
  • 1/4 chopped red pepper
  • 1/4 cup white kidney beans
  • 1/2 cup fresh kale, chopped
  • 1/4 cup pasta sauce
  • 2 tablespoons shredded cheddar cheese
  • Pepper to taste

 

Directions:

 

  • Boil water and add pasta.
  • While pasta cooks, microwave beans so they are warm and put chopped red pepper on the George Foreman to blacken.
  • After pasta has cooked for 7 minutes, add kale to the water and let cook 2 more minutes.
  • Drain pasta + kale, add back to pot.
  • In pot, mix together the grilled pepper, pasta sauce, and beans.
  • Serve and top with cheese and pepper.
  • Viola!

    Maggie is too cute! My dad always eat fruit like that, but he would eat the whole thing over the trash can to catch the juice. LOL. Pasta looks yummy!

    Yum-O to the pasta! How much is a dry serving? Do you measure it out? And yes, I work as many jobs as you do and I completely understand the love of work…and getting up early (my doggie does that as well when I get her up too!)

    sounds like a busy, but good day! have you ever tried filling 1/2 cantaloupe with cottage cheese? it makes a yummy and filling mini-meal 🙂

    Ha Maggie is too cute 🙂 Her is a little grumpy baby, hehe.

    Trixie just rolls her eyes at me that early in the morning..and she also does it while I am jumping around the room doing the Shred lol..

    yes! I work 10.5 hour days, sometimes (like this week) I have 55 hours plugged into being a nanny!! That means extra money though 🙂

    LOVE eating canteloupe like that! For a more filling snack, I fill the middle with cottage cheese. It's sooo good.

    No, I don't work crazy long hours and I'm glad I don't because I really don't like my job. If I had a job I loved, I wouldn't mind though.

    I am up at 5:30, out the door for work at 7:20 and typically don't get home til 7:45 at night. At my old job – I had to supplement my income with bartending, so I was working from 8 – 5 and then 5:30 to 2 AM! As a result I ended up getting shingles because I was running around and stressing to much and eating really poorly. Just make sure to breath!

    unfortunately, i don't work long hours most of the time. as actors, we spend most of our time NOT working. but when we do it's ON.

    I made the 12 min pasta for dinner thanks caitlin!!its super yummy, i used borlotti beans and cooked tomatoes as well and replaced the peppers with peppadew ones chopped finally! its really good if you put it in the oven at 110 and let it slowly melt and crisp for about 20mins!

    That post it came at teh perfect time. I am having a hard time letting myself not exercise today and taking one day off for the week for fear that I might feel sick or something might come up which will mean I take 2 days off, which means only 5 days of exercise!!! But I need to remember that it's something good for me and should make me feel better not worse. Thanks and take care.

    Excercise to live is such an important way of thinking. I used to wake up and start running because I "had to" to be thin, not because it just felt GOOD to move my body.

    Luckily I think I'm onto that better mindset.

    Way to go for inspiring this!!
