I ate lunch slooooooowly from 10:30 to 11:45 today.  I must say, I love inhaling high-volume, low-calories foods!

 

I started off with a Lundberg Rice Cake and a smear of PB (new favorite snack):

The ‘entree’ of lunch was very GREEN!

I made a Roasted Red Potato Soup by roasted about 2 cups of diced red potatoes for 40 minutes at 400 degrees.  I coated the potatoes in EVOO and rosemary first.  Then, I blended the potatoes with 1/2 a head of steamed broc and 4 cups of Organic Vegetable Broth.  I had 1 cup with lunch.

It kind of floors me that all that food is 485 calories or less.  It’s lacking in protein and fat, so I think I might be really hungry once the "I’m stuffed" feeling dissipates.

 

In Other News….

 

It’s BOSTON MARATHON MONDAY!  I am having loads of fun tracking Bobbi from N Her Shoes and my friend Nick from college on the BAA website.  Last time I checked, Bobbi had crossed the 1/2 Marathon marker in 1 hour and 44 minutes, and Nick had crossed the 25K marker in 1 hour and 45 minutes (he’s insane).  WAY TO GO!

 

Are you tracking the Boston Marathon online?  It’s so fun to watch the elite runners speed through the course!  The leading woman just crossed the 25 mile marker in 2 hours and 26 minutes!

    lol I am tracking Bobbi as well! She is doing GREAT! I’m so glad her hubby posted her bib number. I wanted to track Frayed Laces as well but no such luck with the bib number!

    Any idea where I can find a live feed of the race online? ultimatesports.com doesn’t seem to be working for me and of course here in the UK I can’t find it on the bloody tele.

    I agree about high volume foods. But disappointed for Kara Goucher that she came in third when she was really confidently gunning for first…

    growing up i use to go to the marathon all the time, now i watch on tv. i was screaming for Kara to pull it off at the end and cried when she didn’t. bobbi is doing a great job.

    out of curiosity, do you always count calories because you mention them now and again, but you never mention that you count them?

    sabrina – I’m not being crazy about it, but i am paying more attention. I’m only counting now that I’m not running. I’m trying not to put on 10000 pounds over the next month. LOL.

    maybe also it helps to give you the WHY of my question:

    I am a sometimes counter, and I am trying to get away from it completely, but every time I do I end up having to count again to bring my weight back to the low end of my range, and I am curious about who else is out there that does the same. It works for me and I actually LIKE counting…

    I never knew about tracking runners, that is so cool! I just ran 20 min outside for the first time on Sun and couldn’t go ANY more — so these people are even more amazing to me now!

    The Boston Marathon was on TV here (Chicago…we have eight million channels), so I watched all of it until I had to go to work. I missed the last five miles of the women and a lot of the men. I wish I could have seen it!

    2:34:39 was my marathon coach Pauls time today for Boston. He came in 97th overall and 91st man. Crazy hu? We had SEVERAL runners from Chico run this year, so cool! I love your Lundburg rice cakes. They are grown in our back yard. (ok, more like down the street a few miles) I used to teach CPR to the guys out at Lundburg farms. They are a neat company and I love their rice!

    Yes I tracked Bobbi too! It was fun. I also watched the marathon. The ending (for the women) was so heart wrenching!

    To me it seems obvious 🙂 but I think caramel corn should be put in granola more regularly- I think I will follow my own advice as soon as I get home… mmmm…

    it is marathon monday!!! everyone in boston is very excited as it is also redsox/celtics game day! Apparently marathon monday means a day of drinking if you are not running but not for me!

    All that food for under 500 calories?!! That’s amazing! I might have to try that… I can’t seem to get my eating under control, but I like this idea of ‘voluminous’ eating…
