Look how I found Maggie sleeping this afternoon:

Haha! Her body was jammed into the crack of the couch.  Don’t worry, I freed her!

 

Lunch was AMAZING today!  Of course, I had to dig into the special shipment of Amy’s Kitchen products I received this morning.  Although all the products look tasty, I wanted something on the lighter side so I chose:

Amy’s Indian Samosa Wrap, which I heated in the oven per the instructions.  I served it with a nice crispy salad.

Now, the only samosas I’ve had were at Indian restaurants as appetizers.  They are typically fried, but this samosa was a yummy, crispy wrap

My previous experiences with frozen foods led me to believe this would be soggy, but it wasn’t!  And the filling was rich and flavorful.  I was very impressed.  I checked my grocery store this afternoon to see if they carried these (that’s how much I liked them!) and although I didn’t see this flavor, I did spot some Amy’s Burritos… Yay!

 

After lunch + more work, I had a snack:

Nature’s Path Organic Flax Path Pumpkin Raisin Crunch with skim milk.

 

And once that snack settled I drove to the gym for a nice, non-impact workout.  🙂

 

Running Hiatus Workout #8

 

First, I did my strength moves.

 

  • 20 regular push-ups
  • 60 bicycle crunches
  • 10 plank to push ups
  • 15 leg extension with sit ups – right side
  • 15 leg extension with sit ups – left side

 

And then I jumped in the pool! 

 

  • 20 laps (1,000 meters) in 30 minutes 

 

One aspects of swimming that I’m really getting into is the fact that… I suck at swimming!  And that’s so motivating to me. This is something that I can focus on, train for, and (hopefully) improve at!

 

Green Monster!

 

My post-workout snack was inspiration by Angela at Oh She Glows:

If you are not reading Angela’s blog, you are missing out! It’s in my top three favorite blogs actually! :)  My green smoothies never taste that great, and hers look fantastic, so I looked up her recipes and followed the simplest one to the T.

My Green Monster contained:

 

  • 1 cup Almond Breeze (unsweetened)
  • 1 tablespoon milled flax seeds
  • 2 cups kale
  • 1 banana
  • ice

 

So delish! Seriously, I inhaled this smoothie.  One of the things I’ve noticed about my diet lately is that I’m falling back into my yogurt/granola and cereal TRAP.  I eat WAYYY too much granola and cereal, and I don’t like the way processed foods like that make me feel, so I’m going to try to eat more of these healthy green smoothies.  I heart fruits and veggies! 🙂

 

On that note, my dehydrator is about to get a workout.  I just bought so much fruit to dehydrate and I can’t wait to see what happens!  Stay tuned.

    I’m definitely in love with the yogurt/granola combo too! I talk myself into eating something else (w/more veggies, less carbs) and then I end up still eating the yogurt and granola because it is what I crave, lol. I’m gonna have to try the Green Monsters!!

    I am always so jealous when I hear people talking about swimming as their workout. I’m embarrassed to say that I am 23 yrs old and don’t know how to swim. 🙁 It’s such a great workout and being in the water is fun, but I just sink, lol. Keep up the great work (out)! 😛

    I just remembered some dehydrator recipes i saw on a blog a while ago and searched up the link:

    The last two recipes use a dehydrator – blueberry “candies” and all-natural fruit roll ups.

    You should definitely try the blueberry one! Sounds like a good snack food.

    That Almond Breeze has totally transformed my green monsters, too! Yogurt and granola is so addicting, but I’ve been trying to do more smoothies lately and I swear they are helping my sweet tooth.

    mmm, definitely try out the burritos sometime, the black bean and the bean and cheese are the only 2 i’ve tried but they are SO good.. great for a quick lunch or dinner paired with a salad

    Pumpkin raisin cereal? Now, I need to get myself some of that. I also eat cereal a lot, I mean what’s not to love about it? Good luck with the dehydrator, I’ve though about getting one but I don’t know if I’d actually use that. Let us know how it goes 🙂

    I have to say I was quite skeptical of the Green Monster but it’s DELICIOUS!! Mine is slightly different.

    I used : 1 cup light vanilla soy milk; 2 cups raw baby spinach, 1 table spoon roasted whole flax seed, and one banana.

    I usually have a very hard time forcing spinach into my diet since I’m just not a fan, but this will totally work!! Thank you!
