Good afternoon! I am SO thrilled many of you sound enthusiastic about the Blogger Summit.  More information regarding the date and location is forthcoming!  It’s going to be loads of fun!

 

I had the most satisfying lunch today:

The star of the show was three scrumptious Ham and Cottage Cheese Mini Quiches.

These are similar to my Savory Turkey Bacon White White Mini Quiches, but even easier to make!

 

The Ham and Cottage Cheese Mini Quiches contain:

 

  • 2 eggs, beaten
  • 2 tablespoons cottage cheese
  • 1/4 cup chopped spinach
  • 2 slices of ham bacon, chopped
  • Pepper to taste

 

Mix everything up and pour into three cupcake molds.  Bake at 350 for 35 minutes and VIOLA!

Knee Update

 

My left knee feels 100% normal (for me)!  I’m so excited — I was concerned that I had done permanent damage during the 15.0 Mile Trail Race.

 

I COULD attend a Spin Class tonight, but I don’t want to push my luck, so I’m going to stick to the elliptical.  Plus, I can get work done on the elliptical for the blog and holistic clinic.  I am a HUGE fan of multi-tasking on cardio equipment! 🙂

 

Do you work or read while exercising?  Or do you prefer to zone out?  I’m so busy lately that I MUST make good use of my time, but I do enjoy just exercising sometimes as well.

    I’m totally “in the zone” while exercising – I have to be, or my trainer would kick my ass, haha 😉

    Those quiches are cute. Do you make them the night before?

    When I run, I just listen to music and zone out. When I’m on the elliptical or otherwise, I usually read or watch TV.

    HOW do you work while on the elliptical? I always wanted to understand the how of it, because besides thinking, I can’t do much else. Sometimes I watch some tv with no sound, and I ALWAYS blast music, but I could never study or work on the treadmill or elliptical. In college I would sometimes put my study sheet on my lap and ride the recumbent bike, but that’s as far as I could go.

    I second Sabrina! I notice you and Kath (and sometimes Jenna) say you can actually read while on the cardio machine, let alone do WORK! HOW?

    rose – i made them right before i ate them, but i have made them in mass quanities before and refrigerated and/or froze them and its works well.

    re: working on the elliptical — i dunno, i just do it!! 🙂

    Those quiches look great – good idea!! I sometimes try and read a mag on the treadmill, but it’s hard when I’m bouncing up and down from running! I can’t understand how people are able to read/work…am I missing something?!

    I have studied on the treadmill but it was hard to concentrate.

    I try to read on the elliptical sometimes but sometimes my neck hurts from looking down! yesterday though I had a great 50 minute walk that flew by because I was reading my book!! love that!

    I used to read while exercising, and I still do if I am REALLY into a book and can’t put it down, but I find that I work much harder when I’m just listening to music and getting into the workout rather than reading.

    i love to read while exercising! i try to always have a magazine or book on hand…maybe not the most effective workout, but i can definitely go longer on the elliptical with some good reading material!

    Hope your knees continue to feel better! I def. read while doing cardio. I read the newspaper, magazines, books, blogs on my crackberry, etc. It’s the perfect time to multi-task 🙂

    To me exercising is an escape from work and school so I usually let my mind trail off…sometimes I will think about my goals or some fun plans, other times I am completely in the zone and focusing on my body.

    Depends on what I’m doing. I like to zone out when I’m running (but I’m not so good at that so music helps) but strenth training at the gym I like to focus on what I’m doing, otherwise I’ll totally half-ass it! If I’m on the cardio machines of death at the gym, I have to read AND be listening to TV/music in order to not be bored to tears 🙂

    Glad your knees are feeling better!! If I am doing anything but running, I get too bored and I have to have something to read – whether it was a book to study, enjoy, or a magazine. I feel like this is a sign I was made to run or take a class – the boredom of the machine KILLS me!!

    I do not work or read while exercising. I wrote a post about reading while exercising because I just don’t get it but I guess many can do it and still get a good workout. I have tried to read on the Elliptical but can’t do it. I like to focus on my workout, miles, calories burned, heart rate, etc.

    Those veggie quiches look amazing! Now, if only I owned a muffin tin…

    I can’t read while on the treadmill or the elliptical. Not only do I get motion sick, but a personal trainer once told my mom that reading while working out is one of the worst things you can do. According to him you don’t get as good of a workout if you read because you’re not focused on how your body is feeling. I can barely watch television while on the elliptical and keep my speed up as high as I like it.

    I am a television watcher or a blackberry user whilst working out, but I prefer the tv as I don’t have to use my hands.

    Sooo excited for a blogger summit! I cannot WAIT to hear more details – I’m just hoping it’s not during one of the freaking bajillion wedding weekends I’ve got going on this summer!

    I might watch TV half-heartedly or listen to music. If I try to read or do anything else my attention is too divided and I’m not really working out all that hard.

    Sometimes I read magazines when I walk on the treadmill or get on the elliptical. If I’m strength training or running it’s too hard to focus on anything else.

    Aww cute quiches! For workouts, if it’s early in the week, then I do work on the elliptical. If it’s Friday, though, definitely not. I just zone out with music and maybe a mag.

    I’m glad to hear that you knee is feeling better.

    I listen to my iPod when I do cardio but because I like to do sprint intervals instead of steady-state, I can’t focus on reading anything like that. For my elliptical workouts, I usually warm up for a few minutes (incline at 8, resistance at 7) and then I sprint for 20 seconds (resistance turned up to 10), recover for 40 seconds (resistance back at 7) and I do that 8 times. Then I switch to pedaling backwards and I squat for 20 seconds/stand up-right for 40 seconds 8 times and then I do a few minutes of cool down. It only takes 20 minutes but it’s a great workout!

    While exercising, I zone out. Put
    the ipod on and I’m in my own
    little world. Sometimes I’ll
    try reading a magazine-but I usually get too distracted. I also watch TV or a movie. It makes time go really fast.

    My school has TVs on every treadmill/elliptical so I usually get caught up in whatever is on…oh how I will miss that gym next year! And I second Audrey’s suggestion for Boston!

    That is so awesome that your knee is getting better. Good idea on not pushing it. Can you imagine how pissed you would be if you took all this time healing and then did something too soon to hurt it again!?!?!?

    I am completely incapable to doing anything while on cardio machines. It really amazes me how others can read, talk on the phone, write, etc. while on these machines. I can’t even read a magazine and walk at the same time. I guess I’m just totally uncordinated! 🙂

    Glad to hear your knees are starting to feel better! 🙂 The most multi-tasking I can do on cardio equipment is listen to music or watch tv. I once watched a girl holding her laptop up on the treadmill and watching a movie while she walked. I would have dropped it after 2 seconds.

    Every morning when I’m on the elliptical I do some reading for one of my classes, it’s the only way I can feel good about not being able to run (multi-tasking), and justify spending that 30-45 minutes of my time.

    I take along a magazine to read when I cool down on the stationary bike. I don’t bring HW though, because I usually don’t devote the attention it deserves when I am multitasking.

    I used to read a lot while I exercised. Now I find that if I only listen to music – fast, angry music – my workouts are fun and much more vigorous.

    Just made the quiches for dinner…. i doubled everything and made 20!!! i have leftover for quite some time now… hopefully the boyfriend wont eat ’em all! thanks for the recipe
