Good morning!  How are you? 

 

I’ve been dreaming of this breakfast!

My ‘base’ was two Hodgson’s Mills InstaBake waffles.  I added a tablespoon of ground flax to the batter for some extra Omega 3’s!

 

I topped the yummy, warm waffles off with some Chobani vanilla yogurt, sliced strawberries, and blackberries.

Holy YUM!

 

I’m SO glad I "discovered" that yogurt on waffles is much, much more satisfying than maple syrup.  I feel like waffles do not absorb maple syrup as well as pancakes, and then I end up using MORE syrup than is really necessary. 

 

Yogurt is the perfect way to make my waffles moist, sweet, and delish!

 

Daily Gratitude

 

I read an article in the Triathlon magazine last night about how important gratitude is to successful training.   Races are won by people who not only train hard, but are GRATEFUL for that their bodies can do.  It is extremely important for our physical health and mental stamina that we take time out of each day to think about all the things we are grateful for. 

 

In fact, according to the article, people who write down what they are grateful for are significantly happier than people who do not verbalize their thankfulness.

 

I am grateful for:

 

  • The fact that I live a comfortable life in a nice apartment and eat healthy, nutritious foods.
  • My family and friends, who are so kind and giving.
  • My health and my ability to improve it even more through healthy choices.
  • My supportive Husband.
  • This wonderful community of bloggers and readers that I am lucky to be a part of.
  • That I can exercise at all, even if I cannot run the distances I would like to.

    These days I’m most grateful that I landed my dream job immediately after finishing university. I start next week and couldn’t be happier about it!

    I’m all about the yogurt on waffles! Yum!!

    I’ve never tried yogurt with waffles. Does it work nicely with french toast? I’m going to try it.

    I love the patriotic breakfast!

    I’m grateful for my family and friends, the opportunities I’ve had in the past and will have in the future, and my health. Sometimes I get really down about something (not being able to find a job, etc), but I’m actually a very blessed person, which I have to remind myself of. Life could be far, far worse.

    I am grateful that I am honestly alive. After being in hospital in Japan….and not having cancer I feel amazing. I am also grateful for the amount of weight that I’ve lost (110lbs) and for the ability to forgive myself. There’s lots to be grateful for. Thank you for reminding us of this.

    great breakfast, and sounds like a great workout yesterday!

    I’m grateful for my healthy, my husband, our families and friends, a job, and enough money to get by every month. I know there are so many families struggling right now and losing their jobs, so i have to be thankful and grateful for everything I have.

    Hi Caitlin! I agree with the other posters, thank you for this!
    I am grateful for so many things including my family and friends, my health and the health of my loved ones, and the ability to do and have the things I do and have. It’s so hard not to want more more MORE but really, I am blessed.
    Also, I use yogurt on French Toast and have on waffles but my fav on waffles is natural PB and banana. It might sound strange but it’s really good!

    I love Hodgson’s Mills InstaBake, and can’t wait to make waffles with it – great idea to add in some ground flax!

    There are so many things to be grateful for, but I’d say above all, I”m grateful for my loving, supportive, and all-around awesome family 🙂

    A few years ago my husband and I decided to start telling each other what we were grateful for every night while laying in bed. It’s such a nice way to practice looking on the bright side. Some days when I can’t think of anything that went right that day, I will say that I’m grateful for the use of my legs or that I have access to warm running water. When you get back to basics it puts everything in perspective. 🙂

    Oh yogurt on waffles is a stupendous idea! 🙂

    I actually just started a gratitude regime of my own – I am trying to pull out my journal every night and record just a couple things that made me thankful that day. I find that I’m able to journal less and less these days, and this has been an easy way to get back in the groove while managing to put a positive spin on any day, no matter how icky!
