Veggie (and Photo) Dense

This is going to be a photo-dense post of my veggie-dense lunch. :)  I am working under tight deadline pressures at work, which always freak me out.  I KNOW I’ll get the work done in time, but that doesn’t stop me from running around like a headless chicken.

 

I made a grilled cheese + roasted zucchini sammie.  What a DIVINE combo!

I used 1/2 a zucchini, thinly sliced and roasted for about 7 minutes at 500 degrees.  Then, I melted two slices of cheddar on WW toast with the zuch on top for about 3 more minutes.

 

Close to burning…. (whoops!)

It was an ooey, gooey, veggie-packed sammie… and I loved it!

On the side, I had a small salad with 1 carrot + 1 plum tomato.

Morning Snacks

 

I had a Z-Bar today around 9:30.  I really can’t purchase these things in bulk.  They taste SOOO good (like candy, seriously) and it’s a really boring snack (for readers) that I tend to repeat over and over again.

 

At least i tried to take a fun Z-Bar picture with Jamesy.

Do deadlines inspire you or cause you to freeze in panic?? How do you avoid the "deer in the headlights" feeling at work?  I make a list of To Do’s and tackle them one at a time!

    Deadlines definitely inspire me, but when I feel stressed (or anytime, really) I make lists too! It sounds really nerdy, but I make daily, weekly, and monthly to-do lists 🙂

    You may have talked about this in a post I missed or you may not want to go into it for privacy reasons, but I am interested in a little bit more about what your job is?

    And deadlines definitely inspire me – I always wish I could have the kind of focus I get before a tight deadline ALL the time, I would be so productive!

    haha I concur – that’s totally me. When I’m working under pressure (well in my case it would be school work) i can get a bit mad (the British meaning of mad, lol). I think I just get overexcited/stressed too easily 😛

    simple question! i’ve been wondering this for a awhile and i see it on a couple of other blogs..where did the term “sammie” come from and is any sandwich labeled a sammie?

    anon – hmm interesting question! my BFF calls them sammies and i just picked it up from her. i think anything between two slices of bread qualifies as a sammie. 🙂

    I made grilled cheese with those marinated artichoke hearts that come in a jar 2 days ago – that’s a yummy combo too!

    Hey Caitlin, do you happen to keep track of your weight? As in, do you weigh yourself daily? Or do you just go by how your clothes fit? I noticed you mentioned that you gained a couple of pounds during training; why is this? Not that I am critiquing by any means I was just curious because I’d love to start training for a half marathon (I also feel the need to be ‘careful’ after yesterdays comments LOL!).

    leah – well, the batteries on my scale died about 4 months ago and i never replaced them. i was just “over” weighing myself. i try to go by how my clothing fit, which is how i know i put on a few lbs during training… not a big deal, probably only 3 lbs or so, but juuuuust enough so that my wedding dress is reallllly tight now on my hips.

    honestly, the “ehhh” feeling of putting on a few lbs PALES in comparsion to the joy of accomplishing a half marathon. it’s just not a big deal for me because i know i’m at my healthiest, ever.

    the trouble with long distance training is it tends to make you hungrier, and if you’re not careful, you can over fuel. but it’s unlikely you’d put on more than a few lbs, if any, while running long distances.

    leah – also, i think my wedding dress is tight because my leg muscles probably got a smidge bigger/firmer during training, and now it’s hard to squish into my dress.

    obviously, my dress is really, really skin tight if i can tell that difference…. it’s probably only 3 centimeters of weight/muscle gain, and my dress is now officially TIGHT. 🙂

    whatever, sitting down at your wedding is overrated anyways.

    Hello! Thanks for stopping by my blog. 🙂 I am so inspired by your training!! I have never been a ‘runner’ type but it was one of those things I told myself I’d do after my chemo. Still not so fond about running (I am a dance and yoga geek), but I refuse to chew my words back! Heee..Even if that means my marathon will be when I am in my 50s! Oh..lovee zucchini sandwiches!

    Deadlines are a good thing for me because I am a procrastinator. Seriously, I probably wouldn’t do something if I didn’t have a deadline!

    Deadlines make me nervous. I try really hard to plan ahead but it seems like stuff gets in the way and I’m always rushing at the end.
