Getting Ready for Speedwork

Good afternoon! It’s been another wild day at work…. I’m still rushing around like a crazy woman to do that proposal.  It should be done today, thank goodness!

 

Around 10:00 AM, I remembered I needed a snack. :)  I had Kashi Pilaf (cold) + 1/2 cup plain NF yogurt.

This pilaf is so versatile.  It’s kind of pricey for a box ($4.10 at my store), but a little goes a long way.

 

And for lunch, I had one of my favorites…. sweet potato + black bean wraps!

Ever since I discovered that microwaving a sweet potato for 6 minutes gives it the same consistency and flavor as baking it on the oven for 45 minutes, I’ve been a sweet potato convert.  It’s so easy, especially for lunch time. 

 

I added 1/2 a sweet potato (the dogs get the other 1/2 once it cools down) and 1/2 cup black beans to a 100-calorie whole wheat wrap.

 

The trouble is…. this wrap always looks so tiny!  Especially next to my voluminous salad

I had a handful of almonds to round out the meal and add some CRUNCH!

After work, I need to go run some errands, so I think I’ll do tonight’s speedwork session at the gym on the treadmill.  I’ve got 9 sessions of 400 meter dashes to do (groan), but I’m trying to remain POSITIVE about it.  My last speedwork session FLEW by, even if was challenging!

    I already planned on having a sweet potato with black beans for lunch today – now you made me even MORE excited for it, after viewing your lunch photos, haha :0)

    GDW – I added pepper… that’s it. I tend to like stuff unseasoned so I can taste the natural flavors.

    good luck with your speedwork! it reminds me of when i did track in high school and was in the best shape ever. no pain no gain 😉

    betsy – yup. i just poke a few holes in it, wrap it in a wet paper towel, and nuke for 6 minutes.

    I want to try the sweet potato / black bean combo really bad, but I just can't. I'm so accustomed to having my beloved Smart Balance, cinnamon, brown sugar, & walnuts on top that I just can't imagine a sweet potato without 'em.

    Hey Caitlin,

    do you know how many calories are typically in a medium sweet potato (A range), I’ve heard different things and seen different things online so I never know if to think around 100 for one or 200 plus. thanks!

    Do you weigh yourself at all? I stopped weighing myself during the summer and decided to not worry about numbers and just go with how my clothes feel. Now today I’m having a “fat” day (due to my monthly friend) and wondering if I should weigh every once in awhile to keep a better eye on it. My pants felt tight all day and I think not weighing is making me pretend I’m immune to weight gain. What are your thoughts?

    Question… are sweet potatoes the same as yams?

    emily – well, i use to weigh myself every day, which is very frustrating — it’s normal for your weight to change a little everyday! so, the batteries on my scale died a few months ago, and i never replaced then.

    i usually weigh myself once a week or every two weeks at the gym or the supermarket. if i’ve higher than notice, i don’t really worry about it unless i KEEP weighing in higher. then, i try to up my cardio or cut back on drinking or random munching.

    research proves that weighing yourself weekly helps maintain weight loss, just so you stay aware.

    teacherwoman – LOL! according to wikipedia, “The sweet potato (Ipomoea batatas) has traditionally been referred to as a “yam” in parts of the southern United States and Canada even though it is not part of the Dioscoreaceae (yam) family.” So I guess not!
