Hello, hello! Is it just me, or is this day FLYING by? It’s actually a BAD thing because I have a LOAD of work to do and not enough time! GULP! Nothing a little overtime won’t fix. 🙂
Mid-Morning Snack
Normally, I have a piece of fruit in the AM, but I was craving something more substantial, so I had two crackers and a tablespoon or two of cashew butter (who’s counting? not me!).
I think I’m going to name my first born "Cashew Butter." Seriously, that’s how good this is!
Lunch
I had a quesadilla (1/2 cup shredded cheese, a sprinkle of parsley, and a 100-calorie wrap). I love gooey, cheesy quesadillas! No meat required.
To make things a little interesting, I dipped the quesadilla in 2 tablespoons of Fage (full fat) and salsa. Fage is a GREAT sour cream substitute!
On the side, I had a deconstructed salad… green peppers, a plum tomato, and a large carrot. Although this meal was lower in calories than I usually have for lunch, it was so voluminous that I struggled to finish the veggies!
Race News!
I just found out that my mom (she lives in Tennessee) AND my dad (who also lives in Florida) are coming to my half marathon! I am so excited to have supporters! AND my dad got a hotel room for us so I can stay in Jacksonville the night before the race, as opposed to driving 1 hr and a half on race morning. 🙂
Future Husband already has plans for that day, but he’ll be supporting me at the 15k! <3
