The Monday madness at work has been alleviated by several yummy food breaks, which definitely improved my mood! Whole, healthy meals just make me feel so much better about life!
Around 11:30, I munched on some grapes…
And for lunch, I made BBQ-marinated baked tofu (just smothered the tofu in BBQ sauce and baked at 350 for 25 minutes). On the side, I had a carrot, tomatoes, and green peppers — sometimes a salad is better deconstructed! 🙂 I also had 1/2 a baked sweet potato.
Now–all BBQ sauce is not created equal. Most has HFCS as one of the main (and sometimes FIRST!) ingredients. Luckily, I’ve stumbled upon a healthier version: Anne’s Naturals Organic BBQ Smokey Maple!
It’s a pretty sweet BBQ sauce (I usually prefer spicy), but you’ve got to LOVE the all-natural ingredient list. Plus, it tastes a-ma-zing on tofu.
And I just had a lovely snack of Maranatha Cashew Butter and Ryvita Sunflower Seed and Oats Crispbreads. I’ve never had cashew butter before, and it has a very creamy, buttery taste. MMM delicious! And a nice change from regular old PB. I had a big juicy plum on the side.
Plus, I just looked online and saw that Pistachio Butter exists! OHMIGOD! Has anyone ever tried this? It sounds amazing… Imagine it in a smoothie! Or in oatmeal!
