for lunch i made my two bean kale dip, which is sooo easy and very yummy. the kale balances out the bite of the garlic, and the end result is light, flavorful, and satisfying.

1/2 cup canned kidney beans, drained and rinsed

1/2 cup canned pinto beans, drained and rinsed

1/2 cup chopped kale

1/4 cup chopped white onion
-
1 tbsp pepper
-
1 tbsp garlic, minced
-
1 tbsp EVOO
mix everything together in a casserole dish, and bake at 350 for 25 minutes. mash together and serve with WW pita, carrots, broc, or even on a sandwich!

oh GOD! i just checked the 10k results online, and although i placed second in my age division… THERE WERE ONLY TWO FEMALES in the 20-24 age group. so i was actually LAST! when FH and i saw my results, we both laughed so hard i thought we were going to piss ourselves. oh well, my trophy still rocks. 🙂
