egg-cellent pizza

Future Husband and I were STARVING by the time we got back from the gym. I’m not sure why because we both only did light cardio. I did 30 minutes on the elliptical and burned 200 calories. I also worked my biceps and did training for the 100 push challenge.

We did some Olympic time trials, too! When we got back to the house, we looked up the top scores for the men and women in the 1oo meter dash– 9.72 seconds and 10.49 seconds! CRAZY! Then, we mapped out a 100 meter dash in the parking lot. I went first and did it in 16 seconds. Future Husband did it in 13 seconds– he’s like the WIND! 🙂 We might try it again tomorrow and see if we can improve our times. What dorks!

For lunch, I made Egg-cellent Pizzas. I had one, and Future Husband had two. Instead of tomato sauce, these little WW pizzas are coated in salsa. Eggs are used as the “cheese.”

I had a yummy bowl of fresh fruit with my pizza…. half of a banana, some raspberries, and half a slice of cantaloupe.

The fruit provided a nice contrast to the savory taste of the Egg-cellent Pizza!

Egg-Cellent Pizzas

  1. Put 2 tablespoons of salsa on top of a WW pita.
  2. Mix 1 egg and 1 egg white together, pour into a small coated frying pan, and cook on low until you can slide out the eggs as a perfect little circle.
  3. Chop a small portion of green pepper, bella mushrooms, and onions and saute in the pan until soft.
  4. Put egg on top of salsa, add vegetables on top.
  5. Place chopped turkey bacon on top of pizza and sprinkle with goat cheese. I used a shot glass to cut out little circles of turkey bacon… it looked like pepperoni! Yum!
  6. Bake at 350 degrees for 10-12 minutes or until pita is crunchy. Enjoy!

We’re off to do some work, and then it’s OLYMPIC TIME! Go USA!
