stuffed onion

whew! i can’t believe it’s already 9 PM and i just got around to dinner. after work, my neighbor and i took our dogs to the dog park and let them burn off some energy. when we got home, i SPEED cleaned the apartment for our weekend guest 🙂

for dinner i made a modified recipe from a slow cooker book; i call this a “stuffed onion.” if you’re not an onion person, this might not be the dinner for you, but it would be equally delicious in a stuffed pepper.

i mixed together about 1/4 cup cous cous, 1/2 cup water, some chopped tomato, parsley, pine nuts, goat cheese, salt and pepper, and EVOO. after i scooped the inside out of an onion, i stuffed everything inside and baked at 385 for 45 minutes.

i paired it with some steamed broc and raw carrots.

it was great! i think it would be even better in a slow cooker for 3 to 4 hours. i ate all the cous cous mix and about half the onion…. i’ve got killer breath now! 🙂

this pretty much sums up how i eat – ALL THE TIME! my constant running makes me hungry! i don’t mind, i just fill up on healthy foods. i snacked on some Kashi Go Lean Crunch!, all natural non fat yogurt, and blueberries.

i’ve found the combination of fiber, protein, and natural sugars in this snack keeps me full for HOURS!

of course, James got a snack too. i’ve got all natural organic doggie treats that he loves! there’s only 5 or 6 ingredients – i would eat them! (but don’t worry, i haven’t!)

bed time… i’ve got an early morning run! i had scheduled a bike for myself, but i think i can handle doing a 3 mile jog before my 10k on saturday AM.

    I was looking back at some of your old posts to learn more about your training and I came across this! I want a stuffed onion right now!!!

    Wow..I didn’t see these posts when you originally wrote them…it’s so funny to see James when he was a puppy (and you posting meat recipes). His ears look huge!
