Now that Henry is mobile (that baby can run FAST!), life has really changed. But how I eat has changed the most of all. I simply don’t have time to sit down for a nice, big meal when I’m the only parent on duty. I grab a fork and get ready to sit down and – POOF! – Henry is off, getting into trouble. So that’s where healthy snacks come in!
But here’s the thing… the ‘usual suspects’ bore me. I like to mix up my snacks and try something different every day. It’s amazing what a little extra effort can do to a snack – taking it from ho-hum to delicious with just a sprinkle of shredded coconut or a sprinkle of a spice. The name of the game is healthy, fast, portable, and interesting. So, without further ado…
Here is a list of 10 of my favorite healthy {but not boring} snacks.
#1 – Watermelon, fresh basil, and cheese kebobs. This is really tasty with feta, but it’s also great with any white cheese. I make them ahead of time and grab a kebob or two out of the fridge when I’m feeling snacky.
#2 – Anne’s Peanut Butter Bars. Remember how these bars sustained Kristien and I through the newborn stage of Henry’s life? Yup. I lived off these bars (and still do!). I love that they’re no-bake and can be made in five minutes or less.
#3 – Although Anne’s bars are great, sometimes I’m craving something more savory than sweet. I also like to make tomato and cheese kebobs. Sharp cheddar is my favorite cheese with tomatoes!
Yes, everything tastes better in kebob form. Kebob form is very useful for snacks on the go. And we’re on the go all the time!
#4 – Dates stuffed with nut butter. Almond butter is the best. A quick sprinkle of shredded coconut makes it feel gourmet!
#5 – Holy Deliciousness Hummus is excellent on toast, crackers, chips – anything! What makes my Holy Deliciousness Hummus so delicious? Goat cheese!
#6 – I like to buy the pre-portioned ‘snack cheese’ (like string cheese, but not stringy) because there’s no cutting involved. And they fit perfectly in Celery Boats. Love the crunch.
#7 – Speaking of cheese… You’ve got to try a Warm Cheesy Pear. Scoop out the center of a pear, put some cheddar jack cheese down, and microwave it for 45 seconds. A sprinkle of cinnamon makes the flavors pop. I really like snacking on things like this (and like the nut butter dates) because they feel so fancy but are quick to prepare. Quickness is key! If it isn’t fast, I’m not going to eat it.
#8 – Gotta love the old standby – Peanut Butter Toast. I top mine with craisins, raisins, or fresh berries for something different.
#9 – More cheese treats! Apple slices + cheese pieces keeps me feeling fuller, longer than a plain piece of fruit.
#10 – Roasted Chickpeas. I love Diana’s recipe but sometimes, if I’m not in the mood to mix a lot of spices, I just toss the chickpeas in some oil and curry powder. Bake and eat.
