Baked Veggie Egg Rolls

Prepare to have your mind – and taste buds- blown.

Egg rolls seem scary and complicated… especially because I’ve never figured out how to fry stuff at home.  Baking the rolls is a much easier (and healthier) alternative.  In fact, these rolls went from ingredients to in my mouth in just 20 minutes!

Baked Veggie Egg Rolls

 

Ingredients (for 6 rolls):

 

  • 1/3 block extra firm tofu
  • 1 carrot
  • 6 spears of asparagus
  • 6 tablespoons spinach hummus
  • 6 egg roll wraps
  • Olive oil for drizzling
  • Sauce for dipping – I used a coconut curry sauce (from a jar)

 

Directions:

 

  • Preheat oven to 400 degrees and grease a casserole dish.
  • Shave carrot using a veggie peeler to create long, thin strips.  Rinse asparagus.

  • Slice tofu block into 12 thin pieces.  No need to drain.

  • Remove 6 egg roll wrappers from package.

  • In center of egg roll, place asparagus spear, 1/6 of the carrot strips, 2 pieces of tofu, and a tablespoon of hummus.  My recipe for hummus is so thick you can literally roll it into a ball and then into a long tube.

  • Fold sides in, fold up bottom flap, and then tightly roll.  Use a drop of water to seal the second flap down and place into greased casserole dish.

  • Repeat with other wraps and brush with olive oil.

  • Bake at 400 degrees for 15 minutes, plate, and serve with dipping sauce of your choice.

I ate my egg rolls in the car on the way to work at the clinic, and then I also snacked on a baggie of Puffins cereal…

In other news…

 

I have a new lip balm obsession.  I don’t think I’ve written about my lip balm obsession before, but it’s bad.  As in, I have lip balm in my purse, pockets, bra, sock drawer, desk drawer, camera bag… But now I have a new favorite. Burt’s Bees honey lip balm is… the balm bomb.

    Those egg rolls look delicious! I haven’t ever seen egg roll wraps at the store before but I don’t think I’ve looked for them, either. Making your own looks 10x healthier and more delicious.

    Have you ever tried Burts Bees Pomegranate lip balm? That’s my fave lip balm…addicted.

    I just bought Nasoya wrappers the other day and plan on doing something really similar, although probably not with asparagus. I eat it, but don’t really love it.

    I am a burts bees lip balm addict… big time! I’ve got the lifeguard one for Summer, the pomegranate one for year round, and gave the one you posted to my hubby because I found it made my lips tingle!

    I also LOVE the lip balms on the etsy shop called You Stink Soaps, they are SO DIVINE!

    I have the same problem with lip balm! I’ll buy 10 or 12 at a time to keep all my stashes fully supplied!
    My all time fave flavor of Burt’s Bees is Acai. I got a tube of a new Mango flavor at Macy’s and I can’t wait to test it out.

    My sister in law use those wrappers to fry up some egg rolls for the fam and they were disgusting — baking them sounds like a total upgrade and I bet they taste 100x better baked vs fried actually. And the health factor is always nice too! =)

    great idea on the baked wraps. i make fresh spring roll wraps with rice paper. i love FAST wraps.

    I am a huge lip balm addict. I have several of the Burt’s Bees pepperminty balms and a Nivea balm. I’m still in search of a good balm with a 15+ spf that doesn’t end up making my lips white, so if anyone has recommendations. . .

      I’m using Blistex Medicated SPF 15. It’s a clear balm and doesn’t turn my lips white, but I’m sure it doesn’t have all natural ingredients in it. But, it works for me especially when I have to be outside in the winter :)!

        Thanks Marie. I’ll have to look for it. I guess it’s a trade off sometimes between looking after your own well-being (wanting SPF) and trying to use products with all natural ingredients. [And I’m vain enough to not want white lips!]

    Are egg rolls “healthy” for you as wraps? Just curious what they’re made of.

      Here are the ingridents: INGREDIENTS: Enriched Wheat Flour (Flour, Niacin, Reduced Iron, Thiamine Mononitrate (Vitamin B1), Riboflavin (Vitamin B2), Folic Acid), Water, Salt, Wheat Gluten, Vinegar, Eggs, Egg Whites, Cornstarch

      Not something you’d eat everyday but ok once in a while!

      Also… yes… 6 days a week. I work 7 days a week anyway so it’s all good.

    I forgot that I used to make baked egg rolls — w/ coleslaw mix and other veggies + tofu stirfried. Need to make them soon. LOL at the lip balm in your bra. A good way to keep it warm so it glides on 🙂

    I also, have a severe lip balm obsession…except mine is with Aquaphor (it’s actually this vaseline type stuff for really dry skin, ha!) I use it on my lips ALL. THE. TIME! In fact, I even had to put it on before I go to bed. Yes, it’s bad.

    In other news…I have lip balm EVERYWHERE too. I’m glad someone else has the same problem, haha. For some reason I always manage to lose a few here and there and then find them later on…good thing I have so many 🙂

    I am obsessed with lip balm too! My fave back in high school used to be Softlips mint flavour but then they upped their SPF factor and I’m allergic to oxybenzone so I couldn’t use that one anymore. That brand made my lips so freakin’ soft. The BF used to say that my lips felt smooth like marble, hahaha.

    I have yet to find any lip balm that is the same as Softlips from back in the day, even their new organic ones don’t have the same effect but I use Burt’s Bees in the meanwhile. I keep a tube just about everywhere too, but I frequently end up losing them that way; a couple have also gone through the laundry.

    Your egg rolls look amazing. I’m going to have to try those stat. What kind of protein could I sub the tofu for? My stomach doesn’t digest soy properly.

    I’m so glad I’m not the only person who is afraid of frying. I need to try baking egg rolls some day.

    Burt’s bees honey is my least favorite lip balm. (Well, mainly every time I use it, the husband whines about how he doesn’t want to kiss me.)

    Lucky for me Burt’s has a ton of other lip balms I love. I have the original flavor stashed everywhere. The pomegranate one is cool because it has a slight tint to it so I can use it for a bit of oomph on my lips without having to tote a lipsitck or gloss with me everywhere.

    My sister has a chapstick obsession as well, and because we live in Colorado we tend to have them all over the place so don’t feel bad! It’s the winter time too and burt’s bees is amazing! The pomegranate one is great too!

    Do you have a suggestion of a tofu alternative? I have a soy allergy.

    After having a really horrible reaction to something latex used in the OR after having my daughter, I became pretty badly allergic to Burt’s Bees. I had used it forever before she was born.
    I did some research and it appears that some who are sensitive to latex can have adverse reactions to Burt’s Bees. 🙁 I miss it. I loved the kind in the little tubs and the shimmer sticks. 🙁
    I have to try a version of those egg rolls tomorrow! I’m thinking of making them more veggie filled.
    Maybe that’s because I am craving veggie sushi. I have GOT to figure out a home alternative to that!

    Awesome! A lip gloss recommendation that we actually have in New Zealand! 😀 I’ve actually been wondering about the Burts Bees products. I have a really hard time finding lip glosses, since I’m allergic to the ingredients in a lot of them and the results are roughly what might happen if Angelina Jolie got stung on the mouth by a bee and then punched in the face. Not pretty!

    Lip balm addiction? Count me in!
    I’ve loved Lush’s lip balms (all natural ingredients) in the past.
    Now I use plain ol’ natural bee wax, straight from a bee hive 🙂
    (Yes, it sounds gross and it took me sometime getting used to
    the slight ‘smell’ but my lips love it now!)

    The baked rolls and the hummus are currently sitting at the top of my “to try next” cooking list. You have no idea how excited I got when I saw this recipe – I love egg rolls so much but couldn’t eat them because of all the oil. This made me very happy.

    I make veggie eggs roll avocado instead of tofu (http://breadandcheeseplease.blogspot.com/2010/09/game-night-snacks.html) – that way my friends who are scared of tofu will eat them. And avocado makes everything better, anyways, right? I use them more as a party appetizer than a meal, though.

    The respondents and the initator of this blog are fabulous! as someone who made egg rolls from Joyce Chen’s cook book, the baked ones leave something to be desired, but I am willing to try, especially since my daughter had been becoming more and more vegan in the past months. I really appreciate the information on vegetarian and vegan recipes. You’re all awesome!!! Thanks. Sichuan eggplant, spicy vegan potato curry, spinach-mushroom lasagne, but what about the cheese! Vegetarian chili, that’ll work! and moros y cristianos, Si, Si! What I need is not the vast array of different types of foods, although I think complementary textures and colors are important, but tasty!!! I do not need meat, just tasty recipes with beans, legumes, etc. We can do breads. Can we do pasta without eggs? I haven’t reseached that far. Best wishes.
