Yes, I’m making it my personal goal to have canned pumpkin in every. single. breakfast this week! 🙂
Today’s simple breakfast featured Pumpkin Peanut Butter. I really wanted to smear pumpkin on toast, but knew the lack of fat, protein, and calories in general wouldn’t hold me over through the 7 miler I’m about to embark on.
Enter:
I combined 1 tablespoon PB, 2 tablespoons pumpkin, a drizzle of honey, a little cinnamon, and some crushed almonds to make a very satisfying toast topper.
Pumpkin: it’s what’s for breakfast. Again. 🙂
Quitversary
Today is the one-year anniversary of quitting my job as an urban planner and transitioning to being a full-time blogger, writer, acupuncture clinic co-owner, speaker, and freelancer.
A lot has happened to me in the last year (writing a book, launching a clinic, and appearing on The Today Show stand out in my mind as the game-changers), and I honestly cannot believe it’s only been 365 days since I called my boss and uttered the wonderful words, “Hello. It’s Caitlin. I wanted to tell you that I’ve been writing a blog secretly for two years, sold a book concept, and am quitting my job… today.â€
But you know what really stands out over the last 365 days? YOU. Thank you for reading my blog, encouraging me to follow my dreams, and giving me money advice when I freak out over paying self-employment taxes. Thanks for posting Operation Beautiful notes and buying the Operation Beautiful book. Thanks for commenting on Healthy Tipping Point and sharing your own goals and passions, too. I really love reading every comment that comes through and hearing more about what makes other people tick. Thank you for writing your own blogs if you have one, too. I really believe in the awesome power of this e-community and appreciate everyone who contributes in their own way.
I completely recognize that my life would not be the same in one small fraction if it wasn’t for each and every one of you who read HTP everyday. THANK YOU for changing my life.

I think its awesome that you quit your job and pursued something great- not many people have the guts to do that. Seriously though, that’s a big deal. And a big THANKS right back to you for giving me tons of great breakfast ideas, workout tips, positive things to think about, and lots of life lessons 🙂
Oh, when I first read your post I thought you said it was your goal to eat a can of pumpkin for breakfast each day, I was like DANG GIRL! that is a lot of pumpkin! but then i re-read it, haha. I had pumpkin pie oats so so soooo good, hurry up Thanksgiving!
