I had a delicious lunch today! I’ve been tweaking this recipe in my head for a while, and I’m quite pleased with how it came out.
I based this concept on my Bean Balls recipe, but the crispy flax crust really made these babies stand out!
Flax-Encrusted Sweet Potato Balls
Ingredients (serves 1):
- 1/4 cup black beans, drained, rinsed, and patted dry
- 1/2 medium baked sweet potato, mashed
- 3 tablespoons salsa
- Generous amount of ground flax seed
- Mustard or sour cream for garnish
Directions:
- Pre-heat oven to 350.
- Mash together salsa, sweet potato, and black beans.
- Form mix into five balls.
- Spread out ground flax in a low bowl and roll each ball in the flax, coating completely.
- Place balls on greased cookie sheet.
- Bake for 350 minutes at 30 degrees, rotating once.
- Garnish with mustard or sour cream and enjoy!
I had my balls (that’s what she said!) with a side salad.
It was a delicious meal and you WILL be seeing these again on the blog VERY soon! 🙂
Lottery Daydreams
I’m feeling a little down lately (sorry to be such a Debbie Downer on the blog!), so I gave Maggie a good, long hug earlier. She liked it. 🙂
Pets are such good stress-relievers!
During my lunch break, I also played the lottery daydream game, which ALWAYS makes me feel better. 🙂
If I won the lottery, I would…
- Travel the world.
- Buy a home in Napa Valley.
- Go on a series clothing shopping spree.
- Buy a really cool bike.
- Give lots of money to charity.
- Keep blogging. 🙂
- Buy another dachshund.

What would you do if you won the lottery?
Awwwww, such a sweet picture of you and Maggie! Pets really are excellent stress relievers!
If I won the lottery:
I would buy:
iPhone
Road bike
new digital camera
a house
pay off some debt
donate to ANIMAL charities 😉
