Good evening! What a lovely weekend. Future Husband said it best when he sighed, "I feel so relaxed!!" This weekend was exactly what we both needed.
For lunch, we went to our favorite beachside cafe, the Java Joint.
(I just realized you can see the ocean in the reflection! Awesome!) I love Java Joint because you can sit outside and stare at the ocean. It was a little cold so we sat inside.
I had the BEST Eggs Benedict I’ve ever, ever eaten…. seriously, these were amazing.
The eggs were light and fluffy, the ham was seasoned perfectly…. oh lord! Its the Sunday Special at Java Joint, so I know what I’ll be getting next time!
I requested the hollandaise sauce on the side. The Eggs Benedict came with delish home fries.
And I got a medium skim latte with sugar-free hazelnut syrup.
Future Husband claims to know how to make Eggs Benedict, so I think he’s going to have to teach me ASAP!!! This was a brunch that I know I’ll be dreaming about for many, many months.
Then, we debated between (1) running; (2) bicycling; (3) hiking; or (4) shopping. It wasn’t really a contest — we both wanted to go spend some $$$!
We hit up a shoe store, Target, Ross, and TJ-Maxx and stocked up on honeymoon and rehearsal dinner clothing. :) I bought a rehearsal dinner dress but it needs to be altered before I can show it to you all.
I am getting better about carrying an emergency bar with me at all time. I had to break into my stash in the Target dressing room…. I was so hungry! We shopped for FOUR HOURS!
JamFrakas is still disgusting. Yuck!
We went back to the in-laws and made a yummy dinner before hitting the road.
Future Husband was in charge of the salmon, and I covered the sides.
He baked the salmon for 35 minutes at 350 in some EVOO and pepper. He covered the top of the fish with Romano cheese before putting it in the oven. It was so yummy!
I made baked zucchini, mashed potatoes, and brown sugar carrots with pecans.
To make the carrots, I sliced two large carrots and microwaved them in a bowl filled with water for five minutes. Then, I stir fried the carrots in a little bit of butter, brown sugar, and chopped pecans.

After a loooong drive back to Orlando, we unloaded the cars, put away all of our clothes and dirty laundry, and I made a small snack.
