Hello, hello! I am so excited because Future Husband, his brother Nick, our friends Joe and Harry, Meghann, and I are all going out tonight! Orlando has a great club/bar scene, and I haven’t dressed up and cut loose in SO long!

 

We are celebrating Harry and Nick’s birthdays, which are next week.  Happy Birthday, Harry!  Happy Birthday, Nick!

 

Earlier today I made fresh vanilla icing and iced some more cupcakes.  Here they all are, sitting in my super awesome cupcake caddy:

I somehow managed to ice all the cupcakes without eating one… miracle!  But I did eat a cupcake with dinner. 🙂

 

Dinner – Santa Fe Casserole

 

When I was 10, I decided I wanted to be a vegetarian (this lasted for only a few months).  My mom then bought me my very first vegetarian cookbook, "Better Homes and Gardens: Cooking for Today – Vegetarian Recipes."

 

I’ve kept this book for almost 15 years, and the pages are so tattered and stained with milk, oil, etc.  But it has some BANGING recipes in it, and this one is my favorite.

Ingredients (with some minor alterations to the BH&G recipe):

 

  • 1/2 cup red onion, chopped
  • 1 tablespoon garlic
  • 1/2 tablespoon EVOO
  • Pinch of salt
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon pepper
  • 1/2 can red beans, rinsed and drained
  • 1/2 can kidney beans, rinsed and drained
  • 3/4 cup milk
  • 1 and 1/2 cup brown rice, cooked (I used white in this version because we’re all out of brown)
  • 2 eggs, beaten
  • 1 and 1/2 cup cheddar cheese, shredded
  • 1/2 large green pepper, chopped

 

Preparation:

 

  • Heat oven to 350 degrees and spray a casserole dish with EVOO spray.
  • In a skillet, cook the onion, garlic, and EVOO on Medium High until tender.  Add the salt and chili powder.
  • In a large mixing bowl, mix together the pepper, milk, beans, COOKED brown rice, eggs, cheddar cheese, and green pepper.
  • Pour mixture into casserole dish and sprinkle with extra pepper.
  • Bake casserole for 25 minutes or until center is firm.
  • Let cool 5 minutes and serve.
  • Enjoy!

Mid-Afternoon Snacks

Earlier this afternoon, I ate a hearty and healthy mid-afternoon snack (yogurt + granola) while I worked on our holistic supplement website, which will be launching very, very soon!   It will include all the speciality supplements and protein powders I show on the blog.

    My 5k was today and all went well 🙂 My goal was just to finish in under 30 minutes (since I had no idea what to expect, really) and I ended up at 28:59, so I was satisfied 🙂 I can definitely see some more races in my future! Hopefully those 10k’s coming up, but I think I’m gonna check in with a doctor first because my hip and now my shin are giving me problems. I just wanna make sure I’m okay to keep on running (hopefully no stress fractures)!

    this may be wholly unrelated to diet, but I’ve noticed that since I’ve been trying to eat more calories each day, i wake up with BAD night sweats! as in my bed is drenched. This is all the more suspect because I am generally permaFREEZING (and, to note, my jammies consist just of a tank and my drawers). Do you think might have something to do with time of day I eat the most (night) or what, its really annoying, thanks so much! oh and sometimes even if I eat a monstrous bedtime snack (like approx 400-500 cals), I’ll still be on the whole down 300-400 cals for the day, so occasionally, though stuffed when falling asleep, these night sweats are accompanied with terrible hunger pains/stomach growls in the middle of the night. bizzarro. oh poor caitlin, you field so many questions on this blog! so kind of you, seriously

    I love you blog.

    I was wondering how long after you started working out 4 days a week and eating around 1,600 calories did it take to lose the 10 pounds.

    justine – AWESOME!! sounds like you did GREAT!

    lizzie – hmmm. is there a health-related reason why you are trying to eat more calories (for example, are you recovering from an ED)? because if so, your night sweats might be unrelated to the time and amount of food you are eating, but may be related to your overall health. otherwise, i would say that eating a large quantity of food right before bed AND being deficient in overall calories for the day could DEFINITELy be the cause of the night sweats. your body creates heat when digesting food, and I know Future Husband would say that eating immediately before bed is bad (in the eyes of Chinese medicine) because it forces your organs to work when they should be resting. i would try to space your meals out over the day more evenly so you are 1) eating the proper amount of calories everyday and 2) not eating more than 1.5-2 hours before bed. try that for a week and see if it helps! otherwise, i would talk to your doctor because it could be something unrelated to your diet. GOOD LUCK!

    Anon – Thanks for reading! It took me about 1 year to lose all the weight. But it wasn’t a constant loss…. I plateaued a few times, gain back a few pounds to re-lose them later, etc. Healthy, maintainable weight loss isn’t always quick, but sometimes it can be faster! Meghann of graduatemeghann.wordpress.com lost 25 lbs in 9 months, so it’s just dependent on the person.
