Green Eggs and Ham Oatmeal

I woke up this AM feeling refreshed and (most importantly) PAIN FREE.  That’s right, zero pain in my knees! Since I work out almost every day, it’s been several weeks that I haven’t woken up and crawled out of bed sloooooowly due to glued-together joints. 

 

But this morning was so much better! Yay, knee sleeves!

 

I practically skipped into the kitchen and set to work on today’s brekkie – Savory Oatmeal!

Green Eggs and Ham Oatmeal

 

Ingredients:

 

For base:

  • 1/2 cup oatmeal
  • 1/2 cup water
  • 1/2 cup milk
  • 2 tablespoons cottage cheese
  • 1/4 cup chopped raw spinach
  • Pepper to taste

 

Toppings:

  • 1 slice deli meat Virginia Sweet Ham
  • 1 egg
  • 1 tablespoon chopped green onion
  • 2 tablespoons shredded cheese (I used Italian blend)
  • Pepper to taste

 

Preparation:

 

  • Combined first three base ingredients in a pot on the stovetop.  Heat on Medium until liquid begins to boil and evaporate off.
  • Add cottage cheese, pepper, and raw spinach to oatmeal, stirring thoroughly.  Turn off stovetop and let stand on burner until oatmeal is finished cooking.

  • Meanwhile, spray skillet with cooking oil and fry egg and ham.  Move  ham around constantly so it doesn’t burn or stick.

  • Once egg is done cooking, scoop oatmeal into a bowl.  Add egg and ham on top.
  • Sprinkle oatmeal with pepper, shredded cheese, and green onions.
  • Enjoy!

This was SO delicious! I’ve been nervous to try Savory Oatmeal for some time, because I love the sweetness a banana gives to oatmeal.  But I didn’t miss the sweetness at all, because Green Eggs and Ham Oatmeal had a very complex taste and it was so fun to eat!

 

This was definitely a LARGE portion of oatmeal.  I didn’t finish it, and I ALWAYS finish my regular oatmeal.  However, there’s such a great balanced of whole grains, protein, and fat in this brekkie that I suspect it will keep me full ALL morning!

 

I also had a cup of coffee, of course!

    balance, joy, and food – it is a power yoga class. i’ve tried hot yoga before, but i find power yoga to be more relaxing.

    anon –

    i actually work from home, which makes eating a balanced lunch WAY easier.

    but yes, when i worked in the office, i would bring three or four snacks + lunch with me to work everyday in a HUGE lunch bag. it required some preparation, but it was worth saving all that cash! i did tend to eat more pre-packaged foods, like kashi bars and stuff, when i was working in the office because i could keep a stash in my drawer.

    So awesome that those knee sleeves worked out for you!! That oatmeal looks really good…I’ve never had savory oats but I dont see why I wouldn’t like them. I bet with steel cut oats it would almost be like risotto! YUM!

    I really only eat oatmeal with slices of banana and have never really tried any other combos, not even chocolate chips or berries. I would never think that I would want to try savory oats, but you know, green eggs and ham oatmeal actually sounds pretty good to me. It sounds like they would really taste good together. I might have to try it!

    I know what you mean about bringing food to school! I look like I just went to the grocery store when I get to school each morning. The kids probably think I live there! 🙂 It helps to be prepared and over prepared though!

    i’ve been nervous to try savory oats too…but your mixture looks great and i think you’re the first i’ve seen to use scrambled eggs instead of poached/sunny side up (which i don’t like).

    hi caitlin!
    this is such a random question, but i was curious, when you work from home, do you actually shower and get ready and get dressed for the day? or do you just work in sweats all day (which is what i would do!)

    fodie – hahahahah! i actually shower and get dressed every morning. i never just say around in my PJs. sometimes i wear sweat pants, but generally i put on “real clothes.” it helps me function.

    i dont put on my make up though. that’s just pointless. 🙂

    Good morning! Your bowl of savory oats looks so good! I have never tried them before, but they look like something I would especially enjoy.
